This is tougher than I expected. There's a great online cookbook on U Penn's site (if you search ';U Penn African Cookbook'; you'll find it easily), but it has only selected countries. Liberia looks like the closest country to Mali -- I have made some of the recipes for Liberia. There's a lot of great info on what the customs are around eating, as well.





There are certain dishes that are fairly common throughout regions in Africa because of what's available -- fufu is pretty common, I think (mashed yams). It might take some searching, but you might find recipes on the blog of a Peace Corps worker -- I also cooked some Liberian recipes from one former volunteer's site. Some aspects of African cooking are quite different from what Americans are used to, if you're American. I'm used to a couple of tablespoons of oil in a stew, and often you'll see a recipe calling for a cup of palm oil. I did a little adapting.
