brown sausage or bacon

when it's almost done cover the top with cheese and put back in the oven just until it melts

This is the most delicious breakfast thing that ever breakfasted
I suggest a breakfast casserole. Depending on how many people you wish to serve, you put slices of bread in a greased shallow pan. Mix some eggs and milk, salt and pepper, ham cubes, sausage or bacon, and shredded cheese (cheddar or your choice). Let set in refrigerator overnight then bake the next morning. There are many recipe available, but at least this gives you an idea.
Crack the eggs into a bowl. Add a small amount of water, figure about a tablespoon for 2 eggs, and then beat with a fork.

Melt butter in a frying pan. Add the egg mixture and then cook over low to medium-low heat. Once the eggs begin to set use a spatula to make large ';curds'; Cook until done to your liking.

Season with salt and pepper too for more flavor. You can do this with the raw egg or after cooking.
Check out this site that has tons of video breakfast recipes. I'm sure you can find something on there:
