Sweetie,there are tons of options you have.Most of those start off with preparing your ingredients the night before or even on sunday afternoon.Most of these items will last up to a week in the fridge,in an air tight container.
First off,i would suggest a nice fruit smoothie.Prepare your fruits ahead of time.For a smoothie you do not need a recipe.You simply need a base,which is often some yogurt.I usually use vanilla or plain as you can add any flavor too it,and it wont add to that.You could also use a yogurt that either concentrates a specific flavor in your smoothie,or plain where you can add any flavor.Now,you can use any fruits you wish.You can use strawberries,pineapple,orange segments,bananas etc.Allow your imagination to go wild and experiment with different flavors.You can prepare your fruit ahead of time and store in an air tight container in your fridge.When doing this you want to make sure you have enough fruit to last the week so that all you have to do is simply throw a handful of fruit,some yogurt and some ice into the blender and let it go.Chop it all up and just toss it into a bowl together,make sure your fruit is mixed up so that you get a bit of each fruit in each smoothie.This is a quick drink,or even a complete breakfast.
Next,Breads,you can freeze them once baked.Individually,you could purchase some small freezer baggies,and place lets say two slices of bread into your baggie put the date and the item and freeze.When you are ready,as you are preparing your smoothie.Simply heat it in the microwave to get the chill,and you have a healthy breakfast.Here is a recipe that is pretty easy that you can prepare on the weekend for the week ahead.
Low Fat Banana Bread
2/3 cup white sugar
1/4 cup margarine, softened
2 eggs (Or egg replacer equivilent to)
1 cup mashed bananas
1/4 cup water
1 2/3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
Preheat oven to 350 degrees F (175 degrees C). Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
In a medium bowl, beat the white sugar and margarine or butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended.
Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
Bake at 350 degrees F (175 degree C) for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from pan and let cool on a rack.
You could also go for a more ';hearty'; breakfast.Such as:
Baby Spinach Omelet
2 eggs (Or egg replacer equivilent to)
1 cup torn baby spinach leaves
1 1/2 tablespoons grated Parmesan cheese
1/4 teaspoon onion powder
1/8 teaspoon ground nutmeg
In a bowl, beat the eggs, and stir in the baby spinach and Parmesan cheese. Season with onion powder, nutmeg, salt, and pepper.
In a small skillet coated with cooking spray over medium heat, cook the egg mixture about 3 minutes, until partially set. Flip with a spatula, and continue cooking 2 to 3 minutes. Reduce heat to low, and continue cooking 2 to 3 minutes, or to desired doneness. This can be thrown in a tortilla and wrapped as a burrito.This can be frozen and microwaved during the week.
The secret to quick breakfasts.Is not to grab something from a fast food restraunt or eating something that is full of fat and very unhealthy.Simply,take the strain off of yourself.Do your shopping one day,and next prepare everything ahead of time.Therefore,you will only need to microwave and use the blender on week day mornings.Should take maybe five minutes on week morning,and you are preparing for the week.So,you will be stress free every morning and wont be searching through the fridge.More than likely,you will give up and resort to something that is horrificly bad for you.Good luck hun and have a good day!!What are some good breakfast recipes?
For something really healthy and tasty try fresh berries, melon, pineapple and sprinkle with sunflower seeds, mixed nuts and then pour a strawberry yogurt over the top.
I had this recently at a friends and it was really tasty and I wasn't hungry all afternoon. As I am not a health food nut I would never have done this myself but am now converted!
You can make it up the night before and leave it in the fridge in an airproof tub so you can have a healthy breakfast in minutes..... Also the mixes are endless.

One thing I do is make a big batch of muffins on the weekend and then freeze them. I take one out the night before and its ready to eat for breakfast. Muffins will last for about 6 months in the freezer! Here is a delicious muffin recipe that is great for breakfast-
1 1/3 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/3 teaspoon salt
2/3 cup oil
2 eggs
1 1/4 teaspoons vanilla extract
1 1/3 cups grated peeled apples (about 1 large apple)
1/3 cup raisins
1/3 cup flaked coconut
1/3 cup shredded carrots
1/3 cup chopped walnuts (optional)
Preheat oven to 350 degrees F.
Combine in a large bowl flour, sugar, baking soda, salt, and cinnamon.
In separate bowl mix oil, eggs and vanilla.
Stir wet ingredients into dry until just moistened.
Fold in the apples, carrots, raisins, coconut and nuts (if desired).
Fill greased or paper lined muffin cups 2/3 full.
Bake 25-30 minutes or until a toothpick inserted in center comes out clean.
Makes 12 muffins.
Another thing you can make and freeze is a big batch of granola bars. they are quick and easy and when you make them on your own they are much healthier than the ones from the grocery store...here is a yummy recipe
2 1/2 cups crispy rice cereal
2 cups quick-cooking rolled oats
1/2 cup raisins
1/2 cup firmly packed brown sugar
1/2 cup light corn syrup
1/2 cup peanut butter
1 teaspoon vanilla
In large bowl, combine cereal, rolled oats and raisins; set aside.
In small saucepan, combine brown sugar and corn syrup.
Bring to a boil, stirring constantly.
Stir in peanut butter and vanilla; blend until smooth.
Pour over cereal mixture; mix well.
Press into ungreased 13';x 9'; pan.
Cool; cut into 24 bars.
EASY BREAKFAST CASSEROLE
1 lb. sausage, bacon or ham
3/4 c. sharp cheddar cheese
1/2 c. mushrooms %26amp; pieces
5 eggs
1 3/4 c. milk
6-8 slices of bread (cubed)
Place cubed bread in casserole dish, put cooked sausage, bacon or ham on top. Add sharp cheese, mushrooms on top of meat.
Beat eggs, milk, salt and pepper, pour over top.
Let stand 5 minutes then bake at 350 until brown (35 minutes).
HASH BROWNS BREAKFAST CASSEROLE
3 c. croutons
1 1/2 c. bulk sausage, browned and drained
2 c. milk
1 can cream of mushroom soup
2 lb. bag frozen hash brown potatoes, thawed
2 c. sharp Cheddar cheese, shredded
4 eggs, well beaten
3/4 tsp. dry mustard
1/2 c. milk
Place croutons in 9 x 13 inch pan. Top with 1 1/2 cups of cheese and the sausage. Cover with mixture of eggs, milk and mustard. Refrigerate overnight. Mix mushroom soup with milk and pour over the top. Cover the potatoes and top with 1/2 cup cheese. Bake at 300 degrees for 1 1/2 hours or at 325 degrees for 1 hour
If you want something quick, rather than stopping at McD's here's what I do:
Spray a small microwaveable bowl with cooking spray, then break an egg into bowl being sure to break the yolk.
Cover with some waxed paper.
Take 1 slice of ham and place it in a folded piece of waxed paper.
Put an english muffin in the toaster.
Put the egg %26amp; ham in the microwave on high, 30 seconds at a time, it should be cooked after 1 minute or 1:30 depending on the power of your microwave.
The toaster will pop up, take your english muffin, put a slice of cheese on one half of it, then the egg, then the slice of ham. Top with the other muffin half, and there you go, breakfast sandwich in under 5 minutes, and way less fat than at a fast-food place.

The thing I've been eating lately is wheat toast with peanut butter. I just love it! If I'm eating two pieces, I'll put peanut butter on one slice and orange marmalade or raspberry jam on the other piece.
Yoghurt is a great morning meal and if you make it part of your daily diet it can help trim you down or keep you trim. Sometimes I like to add a little handful of granola.
Making your own granola can be a great tasty treat on its own too. You can put it in little zip-top baggies to go, or pour some cream, half %26amp; half or milk over a small bowl and enjoy it that way. The great thing about homemade granola is that you can add your favorite ingredients. I find that store-bought granola tends to skimp on my favorite goodies.
If you make a batch on Sunday, it will last you the week!
This ingredients are just a suggestion. Feel free to use whatever nuts, seeds and dried fruit you like!
Great Granola
Ingredients
5 cups uncooked oats
1 cup sliced almonds
1 cup broken walnut meats
1 cup chopped pecans
1 cup sesame seeds
1 cup wheat germ
1 cup shredded coconut
1 cup unsalted sunflower seeds
1 cup safflower oil
1 cup honey
1 cup raisins
1 cup currants
Method
Heat oven to 325掳. Combine ingredients in bold and mix well. Heat oil and honey together in small pan until melded. Pour over dry ingredients and mix well. Spread mixture onto cookie sheets and bake for approx. 20 minutes. When cool, add raisins and currants.
My kids are usually rushing around in the morning so I came up with a quick ides for them for breakfast and they can eat it on the run. When I have extra time on the weekends or during the week without no kids, I make bacon or sausage or ham with eggs and cheese on biscuits and wrap individually and put into the freezer. All they have to do is microwave them to eat. An alternative to that is miniature pancakes with syrup in the mix with your choice of meat and eggs if you want as a sandwich. The pancake is your bread. All can be prepared ahead and wrapped for individual servings.
This isn't really a recipe but it's a decilious idea anyhow: Grab a bowl and toss in some whole wheat cereal like weetabix or shredded wheat. Pour in some milk and add some pieces of dried fruit of your liking. It's yummy.
