What are some easy, healthy, fast breakfast recipes?

Oatmeal with cinnamon.





1/2 cup quick oats


1 cup milk


1-2 teaspoons cinnamon





Place all ingredients in a microwavable bowl/container and microwave on high for 4 1/2 minutes. Mix and enjoy.





I never use to like oatmeal until I tried this.

Microwaved Oatmeal-- I like the oats that come in a tub more than the little single-serving packets. Add cinnamon, brown sugar or splenda, and banana!





When you have time, make up some breakfast burritos with eggs, fried bacon, and cheese wrapped in tortillas. Wrap and freeze. Pop one in the microwave for 30-45 seconds in the morning for a quick breakfast.





You can also make pancakes, waffles, and French toast in larger batches and freeze single servings. Once again, microwave until warm.





Another idea is to make a batch of muffins, scones, or granola bars.





Sausage and Cheese Scones


4 cups all-purpose flour


2 tablespoons baking powder


4 teaspoons sugar


1/2 teaspoon salt


1/2 teaspoon ground red pepper


6 tablespoons chilled butter, cut into pieces


1 1/2 cups sharp cheddar cheese, shredded


1 1/2 cups ground sausage, cooked


1 1/2 cups low-fat buttermilk


4 large egg whites


--Preheat oven to 400掳F. Combine flour, baking powder, sugar, salt and pepper in a large mixing bowl. Cut butter into the bowl, mixing it up until it looks a little like meal. Stir in the cheese and sausage. Combine buttermilk and egg white together with a whisk. Add the liquid ingredients to the dry ingredients until just moist. Turn dough out onto a lightly floured surface; knead lightly 4-5 times with floured hands. Note: The dough will be sticky. Pat dough into two 8-inch circles on prepared baking sheet (spray with cooking spray). Cut dough into 8 wedges, cutting into but not all the way through the dough like a pie. Bake at 400掳F for 20 minutes or until lightly browned. Cool. Cut wedges all the way through and wrap individually. Put in a ziplock bag and freeze.


*To Reheat: take wedge out of wrapping and place in the microwave 30-50 seconds until warm.





Healthy Muffins


1 1/2 cups oat bran


1 cup all-purpose white flour


1 cup wheat bran


1 cup ground flax seeds or ground flax seeds (not whole)


1 tablespoon baking powder


1/2 teaspoon baking soda


1/4 teaspoon salt


2 navel oranges


1 cup packed brown sugar


1 cup buttermilk


1/2 cup canola oil


2 eggs


1 1/2 cups golden raisins


--Preheat oven to 350 degrees. Line two medium size muffin pans (2-1/2'; muffins) with paper muffin cups. In medium bowl put all dry ingredients together (except brown sugar) mix together and set aside. Wash and cut the stem end off the oranges. Cut into small equal pieces skins and all. Put into workbowl of food processor and pulse until pieces are about the size of large raisins. Put oranges into a large bowl, add all the wet ingredients and brown sugar. Mix together by hand then add in dry ingredients and stir until all are incorporated.


Allow to stand about 3 minutes then fill each muffin cup to top.


Each cup will take about 1/4掳C These are dense and do not rise much. Top off each with any leftover mixture. Bake at 350 degrees for 40 minutes, remove from pan to wire rack to cool. To freeze, allow to cool for at least 4 hours before putting in ziploc bags.


*To Reheat: Reheat from frozen state for one minute or thaw at room temperature and reheat for about 15 seconds.





Yogurt Berry Muffins


2 1/2 cups flour


1 cup sugar


1/2 teaspoon cinnamon


1/2 teaspoon salt


1 1/4 tablespoons baking powder


2 eggs


1 cup strawberry yogurt


1/4 cup vegetable oil


2 cups fresh strawberries, crushed with juice


Glaze


1/3 cup icing sugar


3 tablespoons orange juice


--Preheat oven to 375掳F. Grease 18 large muffin tins. In a large bowl, mix flour, sugar, cinnamon, salt and baking powder. In another bowl, whisk eggs, and add the rest of the ingredients. Pour wet ingredients over dry and mix until moistened. Bake for about 25 to 30 minutes or until a toothpick inserted comes out clean. Remove from muffin tin and let cool.


Glaze: Stir orange juice into 1/3 cup of icing sugar and pour over muffins.
