So we all know the economy is bad and my family is already preparing for a small Christmas. In effort to save money and make more meaningful gifts, we agreed to make gifts for the holidays. This is where my question comes in.
My dad loves to cook. He also loves to pick up old family cookbooks at yard sales. He has plenty of these cookbooks and more dinner recipes than he could ever try but not so many breakfast recipes. My idea is to make him his own cookbook of breakfast items with great family recipes from all over. Anything from eggs, casseroles, breakfast sandwiches, to pancakes, waffles, muffins! If you have a great family breakfast recipe please share. Please include your name (first name only) and hometown so I can give you credit in the cookbook. And this will be for gift giving only - not to be sold.

This is sooooo good and can feed a whole family. I usually make this with 1 lb. of sausage instead of ham, so you can use either one.
**Ham 'n Cheese Omelet Bake**
1 (10-oz.) box chopped broccoli
1 (10.2-oz.) can (5 biscuits) Pillsbury庐 Grands!庐 Flaky Layers Refrigerated Original Biscuits
10 eggs
1 1/2 cups milk
1 teaspoon dry ground mustard
Salt and pepper, if desired
2 cups diced cooked ham
1/3 cup chopped onion
8 oz. (2 cups) shredded Cheddar cheese
1 (4.5-oz.) jar Green Giant庐 Sliced Mushrooms, drained
DIRECTIONS 1. Heat oven to 350掳F. Microwave broccoli in bowl on High for 3 to 4 minutes, rotating bowl 1/4 turn once halfway through microwaving. Set aside to cool slightly.
2. Meanwhile, spray bottom only of 13x9-inch (3-quart) glass baking dish with cooking spray. Separate dough into 5 biscuits. Cut each biscuit into 8 pieces; arrange evenly in sprayed dish.
3. In large bowl, beat eggs, milk, mustard, salt and pepper with wire whisk until well blended. Stir in ham, onion, cheese, mushrooms and cooked broccoli. Pour mixture over biscuit pieces in dish. Press down with back of spoon, making sure all biscuit pieces are covered with egg mixture.
4. Bake at 350掳F. for 40 to 50 minutes or until edges are deep golden brown and center is set. Let stand 10 minutes before serving. Cut into squares.Are there any good breakfast recipes out there?

Tahoe Brunch
Prepare the night before
1 lb bulk breakfast sausage
1 onion, diced
1 tsp garlic, minced
4 to 6 slices bread
2 cups cheese, Cheddar, Monterey Jack, Mozzarella or your choice
8 eggs, beaten with 1/4 cup milk (or non dairy creamer or soy milk)
salt and pepper
Optional: diced green peppers, tomatoes, cooked tortillas
Saute the sausage, onion, and garlic in a little olive oil in a large skillet. Break the sausage up as it browns. Drain excess grease.
While you cook the sausage, oil or spray an 8X11'; glass baking pan.
Layer in the bread, the optional veggies (if wished) and spoon the sausage mix over. Scatter with the cheese(s). Pour the egg mix over, leveling the pan so it covers evenly.
Cover with plastic wrap tightly. Refrigerate over night. In the AM, heat oven to 375 degrees F. Bake for 50 minutes to one hour, or until eggs are set. Serves 4 to 8.
Chorizo (Mexican or Spanish sausage) with eggs and tortillas
Wrap one flour tortilla per person in foil and place in a 300 degree oven to warm.
Brown 3 inches of Chorizo per person in a skillet. Remove grease as needed.
Beat one egg per person and one for the bowl in a medium bowl.
Stir eggs into the Chorizo over low heat until the eggs are solid. Try to not over cook!
Spoon egg - Chorizo mix into warm tortilla and fold up.
Optional toppings:
Mexican cheese, salsa, sour cream, the possibilities are endless!
Brunch Recipe
Ingredients
12 ounces grated swiss cheese
12 ounces grated cheddar cheese
12 ounces fresh mushrooms, sliced or 8 ounces mushrooms, drained
1/2 cup chopped yellow onion
1/2 cup chopped green pepper
1 cup cubed ham
1/2 cup crumbled bacon
1 teaspoon salt
1/4 teaspoon pepper
7 large eggs
1 3/4 cups milk
1/2 cup whole wheat flour
Directions
Preheat oven to 350.
Butter 9x13 baking dish.
Combine cheeses, arrange half in the dish.
Saute onion, green pepper abd fresh mushrooms in 1/4 c butter. Let most all the moisture cook out of mushrooms.
Arrange sauted mixture over the cheese, then sprinkle with ham.
Top with remaining cheese.
Beat eggs with milk, flour, salt and pepper.
Pour over gently other ingredients. Top with crumbled bacon.
Bake for 45 minutes and see if it鈥檚 done, if not put it back for maybe 10 more
Minutes.
Impossible Pie
2 cups milk
4 eggs
1 cup bisquick
陆 cup diced onion
1 cup shredded cheese
陆 pound bacon
Pepper to taste
Heat oven to 400 degrees. Cook bacon crisp break into pieces and sprinkle on bottom of casserole dish, sprinkle cheese on top of bacon then onions on top of cheese. Mix remaining ingredient pour into casserole dish. Bake until knife comes out clean 35 to 40 minutes. Let set 5 minutes
Caramalized Oven Friatta
鈥?8 extra-large eggs
鈥?2 tablespoons heavy cream
鈥?1 cup grated Gruyere cheese
鈥?Kosher salt and freshly ground black pepper
鈥?1 tablespoon unsalted butter
鈥?1 small onion, diced
鈥?4 small red potatoes, diced
鈥?1 cup diced smoked ham or Canadian bacon
鈥?1 cup grated Parmigiano-Reggiano, for finishing top
鈥?1/4 cup sour cream
鈥?1 bunch chives, chopped
Directions
Preheat oven to 400 degrees F.
In a large bowl, whisk together eggs, cream, Gruyere cheese, salt, and pepper until foamy. Melt butter in a cast iron pan over medium heat. Add the onion and potatoes and cook thoroughly. Pour the egg mixture over the top. Pull the edges away from the sides of the pan with a spatula so the eggs flow to the bottom of the pan. When the frittata is half set, add the ham.
Transfer the pan to the heated oven. Bake for 10 minutes until puffed and golden. Shower with grated Parmesan and serve garnished with sour cream and chives.
Onion Brunch Pie
1 陆 cups thinly sliced onions
2 Tbls. Butter divided
3 eggs
陆 cup milk
录 tsp salt
1/8 tsp pepper
录 cup cheddar cheese
陆 cup crushed saltines (about 15 crackers)
In a large skillet over medium heat cook onions in 1 Tbls butter for 8-10 minutes or until golden brown, stirring frequently. Remove from the heat.
In a small bowl, beat the eggs, milk, salt and pepper. Stir in onions. Pour into a greased 7 inch pie pan. Sprinkle with cheese. Melt remaining butter, toss with cracker crumbs. Sprinkle over cheese.
Bake at 350% for 30-35 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.
Note I love this quiche because you don鈥檛 have to have a crust.
banana pancakes with maple syrup
100g self raising flour
1 medium free-range egg
150ml milk
1 teaspoon sunflower oil
2 bananas
pure maple syrup
Sift the flour and a pinch of salt into a large bowl and make a
well in the middle. Add the egg and slowly pour in the milk,
whisking constantly. Add the oil and whisk until completely
smooth. This batter mix can be made the night before
and kept in the refrigerator for an even quicker result.
Cut the bananas on the diagonal into thick slices. Make the
pancakes by greasing with butter the base of a frying pan. Once
the pan is hot pour in about 3 tablespoons batter, then top with
one of the sliced bananas. Once you see tiny bubbles and the batter
begins to firm up flip the banana pancake over with a spatula.
Cook on the other side for a minute or so.
Keep warm, loosely covered with foil, while you make
the other pancake.
To serve drizzle with warmed maple syrup.
Breakfast burgers
Ingredients
Patties:
2 pounds ground beef
1 cup beer
4 tablespoons pure maple syrup
1 tablespoon chopped marjoram leaves
1 tablespoon chopped rosemary leaves
1 tablespoon chopped thyme leaves
garlic salt, to taste
fresh ground black pepper, to taste
4 eggs, cooked over-easy or sunnyside up
8 pieces bacon, cooked to desired doneness
4 hamburger buns, sliced
4 slices extra sharp cheddar cheese
Salsa:
1 cup apple cider vinegar
4 serrano peppers, diced
1/4 onion, diced
4 tomatillos, diced
4 kiwis, diced
Couple sprigs cilantro, leaves chopped
Method
Combine ingredients for burgers in a large mixing bowl and form into 4 half-pound burgers. Grill or broil burgers to desired doneness
Meanwhile, mix ingredients for salsa in medium bowl. Heat the buns
Build the burger: Cheese on each burger; put each burger on a bun; place egg on top; bacon; top with salsa
Biscuits

Sift together 2C sifted self-rising flour, a scant 1/4t baking powder and 1/4t baking soda into a large mixing bowl. With a pastry cutter or 2 knives, cut in 1/2C butter until it is the size of BB鈥檚. Make a well in the mixture, add 3/4C buttermilk and stir until just moistened. Turn out onto a floured board and knead 3 - 4 times--the more you mess with it, the tougher the biscuits. Roll to 3/4'; thick, cut with a 2'; biscuit cutter and bake on a lightly greased sheet @ 450 for 10 - 12 minutes. Brush with melted butter.

Blueberry Crumb Muffins
INGREDIENTS
1 1/3 cups all-purpose flour
1/3 cup white sugar
1/3 cup brown sugar
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1/3 cup vegetable oil
2 eggs
1/2 cup milk
1 1/2 cups blueberries
1/3 cup all-purpose flour
1/4 cup butter, softened
1 teaspoon ground cinnamon
1/3 cup brown sugar
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Grease or line muffin pan.
In a large bowl, mix together the flour, white and brown sugars, salt, and baking powder. Stir in oil, eggs, and milk until well blended and very few lumps remain. Gently fold in blueberries being careful not to mash them. Fill muffin tins 2/3 full, or slightly more for a larger muffin top.
For the crumb topping, mix together the flour, softened butter, cinnamon, and brown sugar. Place a small amount on top of each muffin.
Bake muffins in the preheated oven for 20 to 30 minutes, or until a wooden skewer pierced in the center comes out clean and dry.
Breakfast Casserole
INGREDIENTS
1 (16 ounce) package ground pork breakfast sausage
12 eggs
1 (10.75 ounce) can condensed cream of mushroom soup
1 1/4 cups milk
1 (4.5 ounce) can sliced mushrooms, drained
1 (32 ounce) package frozen potato rounds
1/2 cup shredded Cheddar cheese
DIRECTIONS
Place sausage in a skillet over medium-high heat, and cook until evenly brown. Drain, and set aside.
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
In a large bowl, beat together the eggs, condensed cream of mushroom soup, and milk. Stir in the sausage and mushrooms, and pour into the prepared baking dish. Mix in the frozen potato rounds.
Bake in preheated oven for 45 to 50 minutes. Sprinkle with cheese, and bake an additional 10 minutes, or until cheese is melted.
