Smoothies are always a good bet:
1 scoop vanilla whey protein, or a protein powder like slim fast
1/2 cup cranberry juice (or other low-sugar juice)
1/2 cup water
1 cup frozen berries (or other fruit)
1 banana (frozen makes it smoother)
Blend for 2 minutes until smooth.
Feel free to add tofu instead of the powder.
Oatmeal - try this crockpot or stove version:
1 cup steel-cut (Irish) oatmeal
4 cups water
1 cup dried cranberries (or raisins, apricots, etc.)
Cook on low in a crockpot for 8-9 hours, or cook in stove according to package instructions.
Add 1/2 cup of buttermilk before serving (maple syrup is good too)
Chocolate/Banana Spaghetti Squash ';Cake'; (unusual but tasty):
2 cups cooked, shredded spagetti squash
3 eggs
1 scoop Vanilla Whey Protein
1-2 Tbsp. sugar
1/2 tsp vanilla
1 Tbsp. Cocoa powder
1 banana
Blend all together till smooth
Baked in 8 x 8 lightly oiled cake pan at 350 degrees for 30 min.
Cut into 8 pieces.
Apple cake:
2 apples (with 1 tsp. each cinnamon, cloves, nutmeg)
4 eggs
1 scoop Vanilla whey protein powder
2 tsp cinnamon
1/4 tsp ground cloves
Peel and thinly slice the apples. Mix with cinnamon, cloves and nutmeg. Spread in bottom of a greased 8x8 baking pan. Bake at 350 degrees for 10 minutes.
Separate the eggs and whip the whites (in a mixer) to a semi-firm peak.
Mix the egg yolks well with remaining ingredients.
Fold egg whites into yolk mixture.
Pour egg mixture on top of the baked apples and return pan to oven for 10-15 minutes or until golden brown.

Chiles Rellenos Casserole
2 4oz cans chopped green chilli peppers, drained
6 oz reduced-fat cheddar cheese, shedded (1 1/2 cups)
2 cups milk ( I use 1%)
1 cup packaged biscuit mix
4 eggs slightly beaten
1 cup low fat cottage cheese
Spray a 2 qut rectangual baking dish with non stick spray,
sprinkle chili peppers and chedder cheese in dish
combine:
Milk, biscuit mix and eggs. whip until smooth
Stir in :
Cottage cheese
Spoon mixture over chilies and cheese
Bake, uncovered at 350 deg for about 45 mins.
Let stand for about 8-10 mins before cutting and serving.

Sugar Pie's Blueberry Stuffed French Toast Casserole
Nonstick cooking spray
9 eggs, beaten
2 cups milk
录 cup melted butter
陆 cup maple syrup
12 cups cubed stale French bread
1 (8 oz.) package cream cheese, cut into small cubes
2 cups fresh or frozen blueberries
Blueberry Syrup or maple syrup (optional)
Preheat oven to 350潞F. Grease a 3-quart rectangular baking dish with cooking spray; set aside.
In a smaller bowl combine eggs, milk, butter, and the 陆 cup maple syrup. Whisk until combined. Place bread cubes in large bowl; add cream cheese and the blueberries. Slowly pour the egg mixture over blueberry-and-bread mixture; gently fold mixture to evenly moisten the bread. Pour into greased casserole dish.
Bake 40 to 45 minutes or until a knife inserted near the center comes out clean. If necessary, cover with foil the last 10 minutes of baking to prevent overbrowning. Let stand 10 minutes before serving. Cut in squares. Serve with Blueberry Syrup or additional maple syrup, if desired. Makes 12 servings.

Farmer's Brunch Casserole
(**just omit the ham**)
3 cups shredded hash browns or sliced potatoes
3/4 cup (3 oz.) shredded Monterrey Jack Cheese
1 cup diced fully cooked ham
录 cup sliced green onions with tops
4 beaten eggs
1陆 cups milk
录 tsp. pepper
Optional ingredients: Sliced fresh mushrooms or diced green bellpeppers
Preheat oven to 350掳. Spray 2 quart baking dish / pie plate with nonstick spray. Arrange
potatoes evenly in the bottom of the baking dish. Sprinkle with cheese, ham and green onions.
Combine milk, eggs and pepper. Pour over potato mixture. Bake uncovered for 40-45 minutes until center appears set. Let stand for 5 min. before slicing. Serve with fresh melon wedges and fresh berries and sweet bread / muffins.
Vegetarian Breakfast Burritos:
1陆 hours 40 min prep
6 servings
2 teaspoons olive oil
1/2 medium onion, sliced
1 large red bell pepper, cut lengthwise into 2 inch thick slices
1 large garlic clove, minced
1 (10 ounce) package frozen chopped spinach, thawed and drained
2 teaspoons fresh dill
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1 dash hot pepper sauce
1 3/4 cups monterey jack cheese, shredded
6 (8 inch) flour tortillas, 8 inches in diameter
4 large eggs, beaten
2 cups skim milk or soy milk
1 teaspoon all-purpose flour
1 teaspoon mustard powder
1. Grease a 9 x 13 inch baking dish.
2. Heat oil in large skillet over medium heat. Saute onion and pepper 5 minutes, or until tender. Add garlic, and cook 2 minutes more. Stir in spinach, dill, salt and pepper; cover and cook 5 minutes, or until spinach has completely thawed. Season with pepper sauce, if desired, and stir in 3/4 cup shredded cheese.
3. Spoon 1/3 cup of spinach/veggie mixture down the centre of each tortilla. Roll tortilla tightly, and place seal side down in baking dish. Whisk together eggs, milk, flour and mustard powder, and pour over tortillas. Cover dish with foil, and refrigerate overnight.
4. Preheat oven to 350 deg. F.
5. Bake burritos 45 minutes, or until eggs are set. Sprinkle with 1 cup cheese, and bake 5 minutes more, or until cheese has melted and begins to brown. Let stand 10 minutes before serving with salsa and sour cream.
Pumpkin Muffins
2 1/4 cups flour
1 cup brown sugar
1 tbsp baking powder
1 tsp cinnamon
1/4 tsp salt
1/2 tsp baking soda
1/4 tsp nutmeg
1/8 tsp ground ginger
1 1/4 cups pumpkin puree (10 ounces)
1/2 cups soy milk
Egg replacer for 2 eggs
1/3 cup margarine
PREPARATION:
Pre-heat the oven to 350 degrees. Lightly oil a muffin pan.
In a large bowl, mix one cup of the flour, the brown sugar, baking powder, cinnamon, salt, baking soda, nutmeg and ginger. Add the pumpkin, soy milk, egg replacer and margarine.
Oatmeal Porridge
2 cups water
1 cup rolled oats
2 tbsp raisins or chopped dates
1/4 tsp ground cinnamon
1/4 cup soy or rice milk
2-3 tsp maple syrup
1 tsp flaxseed oil (optional)
Bring water to boil in covered saucepan over high heat. Stir in rolled oats, raisins and cinnamon. Reduce heat, cover and simmer for 15 minutes, stirring occasionally. Serve garnished with milk, maple syrup and flaxseed oil.

butter one side of flour tortilla, place sliced avocado (1/2) on one side, salt pepper and the other side with Provolone or Jack cheese. Broil until cheese melts. Tabasco (up to you), fold in half, eat. Yummy.
Scramble some eggs or if you can't eat an egg, have a fruit cup and some yogurt with granola.
