Spanish Breakfast Tortilla
Servings: 4
Prep Time: 5 minutes
Cook Time: 20 minutes
INGREDIENTS
1 cup HORMEL庐 CURE 81庐 Half Ham, diced
3 tablespoons CARAPELLI庐 Olive Oil
3 cups frozen O'brien potatoes
6 large eggs
DIRECTIONS
Place olive oil in large non-stick frying pan over medium-high heat. When oil is hot, add ham and potatoes. Stir and turn occasionally until nicely browned (about 10 minutes). Meanwhile, beat eggs until frothy. Loosely flatten ham and potato mixture in pan and pour eggs evenly over all. Reduce heat to medium-low and cover. Cook until eggs are firm (about 10 more minutes). To serve, shake mixture loose from pan bottom and slide onto a warm serving platter. Cut into wedges.
PREPARATION TIP: Shredded sharp cheddar or Monterey Jack cheese and fresh tomato salsa add tasty layers of flavor to the tortilla.
SERVE WITH
warm cheddar cheese scones and a generous serving of seasonal fresh fruit.
I know what you mean. I really don't like eggs.
I love potato pancakes with tons of sour cream and German sausage. I tried making them from scratch once and they weren't very good.
Then I asked my German mother in law the secret....Buy the potato pancake mix.
But this is not very healthy.
Fresh fruits---apples, grapes, oranges, mangoes, papaya. Yogurt sprinkled with muesli. Oatmeal. Congee. Yellow corn. Rice and fried fish. Sausages. Hotdogs. Tuna. French bread and cheese. Cottage cheese.

Well if your tired of eggs some blue berry, or strawberry muffins or pancakes or good. But most dishes from a lot of cultures have eggs. SO make muffins, pancskes, or something you might think that isn't for breakfast.....?????? Hamburger patties with gravy and eggs. Also you can make gravy and biscuits. But my favorite is french sticks. smae as french toast but cut the bread in strips.
Blueberry Muffins
Makes 1 dozen
1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
2 cups all purpose flour, plus more for pan
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 cups fresh blueberries
1 1/4 cups sugar
2 large eggs
2 teaspoons pure vanilla extract
1/2 cup milk
1/4 teaspoon nutmeg
1. Preheat oven to 375掳. Generously butter a standard 12-cup muffin pan and dust with flour, tapping out excess; set aside. In a medium bowl, whisk together flour, baking powder, and salt. Working over the bowl, toss blueberries in a fine sieve with about 1 1/2 teaspoons flour mixture to lightly coat; set aside the flour mixture and the blueberries.
2. In the bowl of an electric mixer fitted with the paddle attachment, or using a handheld mixer, beat butter and 1 cup sugar on medium-high speed until light and fluffy, about 3 minutes. Add eggs, one at a time, beating until combined. Mix in vanilla.
3. With the mixer on low speed, add reserved flour mixture, beating until just combined. Add milk, beating until just combined. Do not overmix. Using a rubber spatula, fold in the blueberries. Divide batter evenly among the prepared muffin cups. If desired, in a small bowl, mix together remaining 1/4 cup sugar and nutmeg. Sprinkle sugar mixture on top of muffin batter.
4. Bake, rotating pan halfway though, until muffins are golden brown and a cake tester inserted in the center of one muffin comes out clean, about 30 minutes. Transfer pan to a wire rack to cool 10 minutes. Turn muffins on their sides in their cups, and let cool. Serve warm or at room temperature.
I am allergic to eggs, so I have a few. I make potato cakes with leftover mashed potato-just fry in butter until golden brown on each side- sometimes I mix in some cooked fish, or onions and parsley. I also eat oatmeal mixed with berries and cashews. Cream of rice cereal is nice. Rice cakes made with leftover rice. Smoked salmon and cream cheese on a bagel. mmmm durn it,,,,now you have made me hungry!
There are cereals, yogurts, breads, fruits.....and they are even healthier.....
I make breakfast subs.
1- 'tube' mild pork breakfast sausage
1 -bag frozen potatoes o'brien (potatoes, onion, and pepper)
2 -12'' inch sub rolls
your favorite cheese ( I use either American or mild cheddar)
In large skillet, begin cooking breakfast sausage, breaking it up with fork while cooking.
After a few minutes (it should still be rather undone), add 3/4 bag of the potatoes and incorporate into the sausage .
Cook until the sausage and potatoes are finished, then top with cheese, allowing it to melt.
Split the two sub rolls lengthwise and divide mixture between the two rolls. Cut in half and serves 4 people or 2 extremely hungry folks!
you can make eggs differently:
here is my own tortilla:
2 eggs
potatoes cut in cubes and fried
Grated cheese
2 or 3 layers of your favorite jam, chopped
if you have chicken leftovers, also chopp and put it in
Take the pan, spread with oil (only a Bit)
put all ingredients, except cheese, mix, so it will be even, (not the jam on one side and potatoes in other) and then put in the eggs, and spread the cheese into it.
its tasty, if you like onions also welcome.
hope you enjoy
Mexican Breakfast !!!!!!!!
1 cup white rice
1 1/2 cups water
1 can diced stewed tomatoes, chopped and mostly drained
1 green pepper, chopped
1/2 onion, chopped
hot sauce or cayenne or chilies
1 can red kidney beans, drained and heated
4-8 poached eggs
1 avocado, chopped or sliced
sour cream
salsa
grated cheddar cheese
sliced green onions
Cook your rice.
Saute the onion and green pepper in a small saucepan, add tomato and hot sauce, simmer covered while you prepare the rest.
Layer the breakfast as follows: Rice, beans, stewed tomato mixture, 1 or 2 poached eggs, and top with desired condiments.
Handheld Breakfast Sandwiches
1 whole onion, diced
1 lb. ground sausage
6 eggs + a little milk
1 package crescent rolls
Shredded cheese
Brown the onion. Add sausage and cook until done. Remove from pan.
Whisk the eggs together with the milk. Scramble in the same pan as you cooked the sausage (less to clean up).
Spray muffin tins with cooking spray. Unroll crescent roll dough and place in bottom of muffin tins (there are 12 rolls and 12 tins) with the three flaps outside of the tin. Mix together the sausage and eggs. Fill the tins. Cover with cheese. Fold the flaps over so everything is contained within the crescent roll 'basket'. Bake according to the crescent directions. They should be golden brown. Pop them out and you have a perfect handheld breakfast sandwich.
These can be stored in the refrigerator and heated up when needed. Enjoy!!
