Breakfast Recipes?

Does anyone have any recipes for a nice light breakfast for my mums birthday breakfast?

Eggs benedict on English muffin! Only problem with that is that it takes several years to cook.Breakfast Recipes?
Try this with the smoked salmon. It's simple to do, but the end result looks and tastes utterly fantastic.





SCRAMBLED EGG





Serves 1





INGREDIENTS





2 eggs*


1 tablespoon of butter


Ground pepper to taste





METHOD





Put the butter in a saucepan on a medium heat. Melt the butter. Break the eggs into the pan and pick out any bits of shell. Season with the pepper. Stir frequently to stop them sticking, and to scramble them. Cook for 1 to 2 minutes until the eggs are still moist.

Serve on 2 slices of hot buttered toast.





TIPS





* Use fresh eggs at room temperature. There is no need to keep eggs in the fridge.





It is better to slightly undercook eggs than to overcook them, as they end up like rubber.





For a really luxurious breakfast, add a small packet of smoked salmon. Cut the salmon into 2cm (1 inch) pieces. Scatter the pieces over the eggs. Serve with orange juice and coffee, or even a Buck鈥檚 Fizz cocktail (half champagne and half orange juice).

Boil some eggs the day before and keep in the fridge. The next morning, fry some bacon and set it aside to cool. Take 2 wraps / tortillas, spread some light mayonnaise on one side, thinly slice the eggs, and put one layer on the wrap, then lay the bacon on top and roll it up.





Serve! A coffee or orange juice will go well.

This is my all time favorite breakfast. It would better with bacon of course, but you said light... ;)
