Lately i've been turning into this health freak, and I don't want to eat prepackaged foods with a lot of preservatives in them. So I've been trying to find recipes for breakfast and lunch that are healthy, but there isn't so many good ones. Could you tell me your favourites? What are your favourite healthy recipes for breakfast or lunch?
A simple chicken salad is good - with leftover chicken, cut into cubes, then add diced celery and some mayonnaise, salt. Easy! You could also make a green salad and cut cubes of leftover cooked chicken on top of that.What are your favourite healthy recipes for breakfast or lunch?
As your mom would say, eat your veggies! I know vegetables may not seem like the most tasty food option for you, but they really are healthy, and if you prepare them in the right way, they can taste really good. One of my favorite veggie recipes is from Frigidaire's site at http://frigidaire.stores.yahoo.net/save.html - but go light with the hollandaise sauce, it's very tasty, but in moderation:
Sauteed Vegetables:
2 tablespoons extra virgin olive olive
1/2 medium red pepper, julienned
1/2 medium yellow pepper, julienned
1/2 medium red onion, thinly sliced
1 small zucchini, julienned
1 small yellow squash, julienned
Add olive oil, peppers and onion to a preheated skillet. Saute over medium high heat for approximately five minutes. Add remaining vegetables and cook until desired doneness, 5- 10 minutes. Season with salt and pepper.
While vegetables are cooking, medium poach 4 large eggs.
Quick Hollandaise Sauce
1/3 cup cholesterol-free egg product
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard, regular or country style
1/4 teaspoon Worchestershire sauce (optional)
1/8 teaspoon ground red pepper (caynenne)
1/2 cup (1 stick) butter or margarine, melted
Place first 5 ingredients in a small bowl. Mix with a hand mixer at the lowest speed. Slowly, add hot butter until blended.
On each plate, place 1 roasted mushroom, add 1/4 of the sauteed vegetables. Carefully slide the eggs out of their poaching cups and place on top of the vegetables. Top with 1/4 cup of the hollandaise sauce. Serve immediately.
For breakfast it's usually a smoothie with a banana, some yogurt and frozen fruit or your choice. The frozen fruit acts like the ice to you don't have to add any. Oatmeal is always a good choice but if you're like me you rarely have a chance to actually make it. So I eat a lot of cereal just without the milk. Good one are the multi grain cheerios or any of the cheerios really, frosted mini wheats, or oatmeal squares.
For lunch it's usually a Bagel sandwich. Toast the bagel add some ham and and cheese, tomato, cucumber are always good on there. Or you can do a toasted bagel with cream cheese and tomato.

Well one of my favs is a breakfast parfait of sorts...
I mix some healthy granola (you have to read the label to make sure that it truly is healthy), some low fat or fat free vanilla yogurt and some peaches or bananas or whatever fruit you like together in a bowl.
And sometimes if i am feeling a bit crazy i will add a sprinkle of cinnamon (especially to the banana one)
Smoked Salmon served with scrambled eggs (on toast if you like).
dont beleive Raimes. He sends same thing to everyone. And it contains with virus.
