Do you have any special recipes for breakfast casserole?

I'm looking for a recipe that will be pretty as well as delicious. (We're hosting an early breakfast/brunch for a wedding party, so presentation is important.)





Someone suggested topping the casserole with cheese and diced tomatoes, which may work very well. Just wanted to see what the folks at Yahoo Answers might think.

Eggs In A Nest

6 tablespoons butter, melted


2 cloves garlic, minced


3 sheets phyllo dough, thawed


8 eggs


2 tablespoons water


4 tablespoons butter


1 cup diced ham


1 cup grated Cheddar


Salt and pepper





Preheat oven to 375 degrees F.


Butter 4 muffin cups. In a small bowl, combine melted butter and garlic. On a cutting board, stack 3 phyllo sheets and cut into fourths, forming 12 squares. Cover phyllo with a damp paper towel when not in use because it dries out quickly. Press 1 phyllo square (one sheet thick) into bottom of each muffin cup. (Don't worry if phyllo tears) Brush with butter. Add another layer of phyllo and brush with butter. Repeat a third time. Bake for 10 minutes. Carefully remove phyllo baskets from muffin cups and cool on wire rack. In a medium bowl, beat eggs and add 1 tablespoon water. Melt 2 tablespoons butter in a medium skillet and add eggs. Sprinkle ham over eggs. Scramble eggs to desired doneness. Sprinkle in cheese and stir until melted. Season with salt and pepper and spoon into phyllo baskets.

Prep Time: 20 minutes


Cook Time: 10 minutes

HASH BROWN CASSEROLE





2 lbs. frozen shredded hash brown potatoes (thawed)


1 bunch green onions, chopped (greens, too)


sweet pepper chopped (red 鈥?green 鈥?yellow 鈥?orange 鈥?or a mixture of all) use as much as you like...reserve about 1/4 cup.


1 lb. Sausage, cooked until pink disappears, crumbled


1 cup ham cubes


4 slices crisp bacon, crumbled


1 small can sliced mushrooms


1 small can sliced black olives


2 鈥?8oz. packages of shredded cheese


陆 cup milk


12 eggs beaten


Tabasco (optional)


sour cream %26amp; salsa (optional)





Grease a 9 x 13 baking pan, wipe excess with paper towel.


Spread potatoes on bottom (cand be lightly browned in a skillet first if desired)


Sprinkle sausage over potatoes鈥hen


Peppers鈥?br>

Mushrooms鈥?br>

Ham..


Onions (reserve about 录 cup)


Mix eggs %26amp; milk together鈥︹€?I added about 2 TBLS. Tabasco鈥ore to your taste鈥?pour slowly over all.


Cover with shredded cheese鈥?then sprinkle over all


Remaining onions鈥?br>

Olives鈥?br>

Bacon鈥?br>

Peppers


Cover and refrigerate overnight.


Uncover and bake at 375 degrees for 35 鈥?45 minutes鈥ntil browned and cheese is melted.


Serve with sour cream and/or salsa.
Asparagus Breakfast Casserole Recipe


Ingredients:


1/4 cup margarine


1/3 cup onions, chopped


1 cup frozen asparagus, thawed and chopped in 1/2-inch slices


15 ounces frozen hash brown potatoes


12 eggs, beaten


1/3 cup ham, sliced and cut in 1/2-inch slices


1 1/4 cup swiss cheese, shredded


Directions:





Melt butter and swirl to cover bottom and sides of a 9x13-inch pan. Spread potatoes (still frozen is okay) in bottom of pan. Top with chopped onions, ham and asparagus. Salt and pepper slightly. Sprinkle 1 cup swiss cheese on top. At this point you can continue or casserole may be refrigerated overnight.


Pour beaten eggs over hash browns %26amp; vegetables. Sprinkle with more salt and pepper.





Bake at 350 degrees F for 40-45 minutes or until a knife comes out clean.





Sprinkle with remaining 1/4 Swiss cheese and return to oven for 2-3 minutes or until cheese is hot and bubbly.
Don't like the add't of diced tomatoes as they can get watery and soak the cassie.





To any good brkf cassie, just add to your custard mix, 1 can cream mushroom soup. Make sure to add 1 t dry mustard for a little kick if not in the original recipe. Then add frozen tater tots to the bread in the cassie. Sprinkle on a cup of grated cheddar or longhorn. Pour the custard over it, sprinkle with paprika for some color. Bake as per recipe. It is fantastic...wish I had some now.
EGG CASSEROLE


10-12 slices cheap white bread, crusts removed


1 can Niblets Mexicorn, drained


1 (4oz) can mild chilis, chopped


4 eggs, beaten with 3 c. milk


salt %26amp; pepper to taste


1 lb. sharp cheddar cheese, grated


paprika


Break up bread; add rest of ingredients (except cheese %26amp; paprika). Pour into buttered 9x13'; pan. Cover with cheese %26amp; sprinkle w/paprika. Cover with foil and REFRIGERATE OVERNIGHT. Bring to room temp and bake at 350 for 1 hour. Serves 10-12..





Not only does this serve alot of people, but you'll be putting it together the day ahead! It would look nice with some diced tomatoes sprinkled on, after it's cooked, and some chopped fresh cilantro

This is my favorite it is more of a sautee dish than a casorole but it tastes alot better than a cassorole





Extra Virgin olive oil


2 scrambled eggs


diced green pepers


sliced yellow onions


cheddar chese


sea salt


grind pepper


italian seasoning


* have not decided how much of each just eyeball





Directions-


Put frying pan on medium heat and pour olive oil onto pan. Next scramble the eggs and add the other ingredients to the eggs and move around with your spatual.
