1 potato - grated
1 egg - beaten
3 tablespoons onion - diced
1/2 - 1 diced jalapeno
salt and pepper
1 teaspoon flour
Combine all the ingredients. Place into medium low heated pan with oil of your choice. Pat it down with a spoon or back of a spatula so it kind of looks like a pancake. Cover the potato mixture with a lid and let it cook for about 7 minutes on medium low heat, then flip and cover for about anther 7 minutes or so. The heat varies so much on different stoves, so you might want to keep an eye on this to make certain it doesn't cook too quickly since the potatoes may not be completely cooked if it does. You do want the heat somewhat low. Add more oil if you need to when flipping.

this one feeds a lot of people. pre-heat oven to 350. put a cast iron frying pan on the stove at medium high heat. peel and thin slice enough potatos to fill the pan. In the hot pan put 2 tbsp oil and 2 tbsp butter. put in the potatos , salt and pepper them to taste, keep them turning for a few minutes. mostly to get the salt and pepper mixed in and everything oiled up. Get an oven proof plate that fits just inside the top of the pan, cover the spuds, with the bottom of the plate to the outside. put it in the oven for 30 - 45 minutes. Take the pan out, invert the works onto a board and let it stand until the potatoes naturally fall awau from the pan. They should have a golden brown crust and be nicely done on the inside. if they arent -- back into the oven. Think of it as a gigantic tater tot.
i just put potatoe(s) in microwave, prick them a bit, bake them wait a few min to cool down, slice them, add a bit of oil to pan, add sliced potatoes .....(i know you dont have onion lol...but i add diced onion , you don't have* to if you don't have any, that's fine)...salt, pepper, then grate cheese and throw over potatoes before they're done, add sliced tomatoe to pan for a few min also if u like (or have), slice of english muffin toasted and an egg*
BOIL POTATOES FOR 20 MINUTES AND PEEL THE SKIN CUT IT INTO CUBES. HEAT LITTLE OIL ON PAN AND ADD CUMIN SEED LEAVE IT FOR 1 MINUTE AND ADD BOILED POTATOES AND SALT YOU CAN ADD CORIANDER LEAVES
boil potatoes, cut into wedges
or roast them (fingerlings are good)
melt some butter, add chopped chives
toss the cooked potatoes in it
salt + pepper!
