Any REALLY good, really quick breakfast recipes? I'm kind of picky so please read below.?

I'm diabetic and don't do well with sugars first thing in the morning, no cereal, donuts, or fruit. Also, a grab and go or microwaved breakfast would be great. I've been eating breakfast burritos at different fast food places which I love, but they're too expensive and take too long to cook at home. When I do eat breakfast at home it's usually leftovers from supper the night before. Any suggestions?Any REALLY good, really quick breakfast recipes? I'm kind of picky so please read below.?

Yesterday, I finally tried out the Zip-Lock omelet recipe, and the final result was soooooo yummy. I detest dry omelets, but the way these are made, the steam has no where to go, so you are left with a very moist omelet.





First thing you do is make sure you have a quart size freezer zip-lock bag, two eggs, and stuff to go into your omelet...Oh, and a pot big enough to boil your freezer bag is a necessity too.





Assemble all the stuff you want in your omelet.





Fill your pot with water, and let it start boiling.





Open the freezer bag, crack the two eggs into the bag, shake it up a bit.





Add the ingredients, and shake them up too.





Make sure all the air is out of the bag





When the water is boiling, put the bag into it, and allow it to cook for 13 minutes. Warning, do not the Freezer Bag to droop down and rest on the\ outside edge of the pot. Keep all the bag in the water..it will be fine there. Outside the pot, the bag will melt and smell bad :(





After 13 minutes, take the bag out of the water, open the bag, and roll the omelet out onto a plate.





That easy. That quick. That fool proof.





You can also assemble the bags, and freeze them until you need them. Cooking time may vary then....I need to experiment :)

If you preheat the oven to 375 when you first get up, you can have a breakfast quesadilla ready within about 15 minutes. Use whatever cheese you like (I usually use jack but I love to add some cotija if I have it) and add whatever you have on hand that's compatible. Black beans are tasty and healthy; other options are salsa, leftover vegetables, and/or leftover cooked chicken. (So your supper leftovers don't necessarily have to go to waste!) Wrap it loosely in foil and stick it in the oven for 5-10 minutes. Practically ';grab-and-go'; but a lot less expensive, healthier, and better-tasting than fast food.
Mix yougurt with tomatoe cubes olive oil +salt %26amp; pepper


Spread on French toast, or dip with tortillas
have you ever thought of making your own burritos when your not in a rush and freeze them and then you can use your microwave.....check if they are cheaper...you might be surprised and the nutritional value of the home made...
Here's the typical breakfast we have in Spain:





take a roll (not a sweet roll - baguette french or italian type bread is best). Take a very ripe tomato, cut in half and rub on each half of the roll...all the juice and pulp should be on your bread, throw the rest away. Drizzle a little olive oil over it, and a pinch of salt . Eat as is, or add a slice of cheese or ham (prosciutto or serrano ham is best, but any ham or even turkey cold cuts are nice) Or you can put a little can of tuna fish on it with the oil in the can.


Also, if you like, you can toast the bread a little before adding the tomato...the toasty smell gives you a great wallop in the morning!





I'm diabetic myself, so I avoid sweets too.
Throw a muffin/toast/ other bread item in the toaster. At the same time, crack an egg in a microwave safe bowl. add a splash of milk. Stir. Microwave for 30 seconds, stir, then another 30 seconds - egg should be cooked, if not add another 30 seconds. Put a piece of cheese on top and put on whatever you toasted. This also works as a wrap, just heat the wrap in the microwave for 15-30 seconds. You can add meat if you want, but I usually don't. Pretty good stuff!
Get a lot of those single serving microwave safe plastic containers with tight fitting lids. You can make lunches for a whole week if you plan well. You can also get a head start on breakfast.





Breakfast:


cook meats ahead and portion out


cook up some pancakes / french toast and portion out


all that's left to do is cook your eggs (if you want them)





hot wheat / oat cereals are easy to do. use DEEP plastic containers and the micowave. measure in the plastic contain the night before. in the morning, add water and cook.





LUNCH





Cook up a any meat, and portion out into the containers.





Mix up some raw broccoli, carrot shreds, spinach leaves, etc. Portion out. Eat raw or add a couple drops of water and microwave for one minute.





Slice tomatoes, or some other veggies that you like raw. Place in plastic continers.





Make small salads in the plastic containers.





Cook some rice and portion it out.





Make soup and portion it out.








you're probably getting the idea by now.
I have a great, easy, and sugar free breakfast for you.


Take a few eggs, crack them open in a bowl.


Cut very small hunks of cream cheese, and mix them into the egg. (leave them in hunks in the egg, not mixed in)


Add splenda, a few packets, as much as you like to taste.


Stir all together, and microwave for about 40 seconds, until it turns fluffy like an omlette.


It will taste just like a danish, but sugar free, fast, and microwavable!
muffin or bacon
Try a whole grain english muffin with Brummel and Brown Simply Strawberry Spread (made with strawberries and yogurt) or Country crock now has 2 flavored spreads you could try.


Make your own whole wheat waffles or pancakes and keep in the freezer. They heat up nicely in the toaster in just a few seconds.


Make scrambled eggs the night before and put them on a bagel.


Fry bacon and reheat in the microwave and put that on the sandwich too. Add a little salsa and you are on your way.
how about eggs?
For a quick and easy breakfast burrito, just scramble some eggs, add salsa and wrap in a tortilla.
Seafood salad made ahead of time with those ';sea legs';. Rinse them and sprinkle lemon juice on them. Add vegeonaise or a bit of mayo, plus chopped celery, chopped fresh dill and a bit of salt and pepper (onions optional). Make it the night before.


An omelet with eggbeaters. Throw in chopped tomatoes and a bit of shredded Parmesan cheese.


Smoked fish.


Almond butter on a whole wheat bagel or other bread things allowed to diabetics.


A few slices of soy cheese (check for sugar content)


Make a few sausages up ahead of time (check for sugar).


Cottage cheese.


Sugar free yogurt.
why don't you just do it the night before?:


breakfast quesidilla


4 12'; Flour Tortilla Wraps,


1 small onion small dice,


1 6'; of your favorite sausage sliced,


3 tbsp diced green bell pepper,


1 small tomato small dice,


3 sliced pieces canned jalape帽o small diced,


3 whole eggs beaten,


1 tsp black pepper,


pinch salt,


2 tbsp chopped cilantro,


4 sliced American cheese cut into strips or 陆 cup of your favorite


shredded cheese.





Lay out tortillas on a clean counter. In medium sized saut茅 pan,


saut茅 onions, bell pepper, and favorite sausage. Add tomatoes and


jalape帽os, beaten eggs, season with pepper and salt and cilantro and


scramble your eggs. Divide scrambles into four and place on the


half bottom side of the tortilla. Add shredded cheese on top and


place in a pre-heated 350 degree oven. Bake till cheese melts and


tortilla is a little bit crispy. Cut up each quesadilla into 3


pieces and serve.





Very simple and great idea.





grilled cheesy egg sandwhich


2 slices of honey wheat sliced bread,


2 eggs beaten,


pinch salt and black pepper,


2 tbsp butter and 2 slices of American cheese.


Variations: add diced: onions, bell pepper, tomatoes, other vegetables


and meats to your scramble eggs. Choose your favorite sliced cheese.





Scramble eggs to your liking in small (6'; pan), transfer to a small


dish and set aside. Melt butter in pan with 1 tbsp of butter, place 1


slice of bread, add 1 slice of cheese to the bread, add scramble eggs,


another slice of cheese, and last slice of bread. Let bread brown


(like a grilled cheese). Remove sandwhich, add the last 1 tbsp of


butter to pan and brown the other side of the sandwhich. Enjoy.
a sandwich is easy and fast to make. I usually eat cereal for breakfast but on the weekends I eat toast, eggs and cheese.
Cottage cheese with walnuts or almonds.





whole grain toast with natural peanut butter (no added oils, or sugars)





whole grain crackers with cheese.





Everything else I can think of that is easy is fruit! I can see how it would be hard to come up with some good breakfast ideas without sugar. They do make these little croissant breakfast sandwiches in the frozen food aisle of the grocery store. I don't remember the brand but they only take 1 minute in the microwave and are really good.
Here's two bagel recipes I really like





Generally a plain bagel works best, toasted or not, your choice


Crack an egg into a teacup saucer, and cover it with another saucer. Microwave for 1 minute. Slice the bagel and place a slice of deli ham on the bottom, when the egg is done, put it on the ham, put a slice of american cheese on the ham. Salt and pepper to taste, cover with the other half of the bagel








This one is ';open face';


Again, using a plain bagel, this time toasted is best. Shmear the bagel with cream cheese, add a thin slice of red onion and a slice of tomato, season with salt, pepper, and a dash of celery salt.
i don't know if you like eggs, but i usually eat and omelet in the mornings. Plus if you don't have a lot of time you can mix your eggs and whatever else you like (meat, cheese, veges) and stick it in the microwave and eat it like scrambled eggs.
well, i was gonna tell you about my yummy breakfast burritos...


i guess you could make them the night before ~ scrambled eggs, real cheese, and tomatoes. top with a tad of salsa if you want.


My very favorite breakfast though is real quick and good for you. I open a thing of yogurt (vanilla or coconut creme pie flavor), throw in a handful of almonds and a handful of berries. But, you can leave the berries off.
Farmer's Breakfast





4 potatoes


4 strips of bacon


3 large eggs


3 tablespoons milk


1/2 teaspoon salt


1 cup diced ham


2 tomatoes, thinly sliced


1 tablespoon sliced green onion





1. In a large pot over medium-high heat bring plenty of cold salted water to a boil. Add potatoes and boil for 30 minutes until tender but still firm. Remove from heat. Rinse under cold water, and set aside to cool enough to handle. Peel and slice; set aside.


2. In a large skillet, cook bacon over medium heat until transparent and limp. Add potato slices and cook until lightly browned 5 to 10 minutes.


3. Meanwhile, in a medium bowl beat eggs with milk and salt. Stir in ham and tomato. Pour over potatoes in skillet. Cook until eggs are set, about 8 minutes. Garnish with green onions to serve.





Bacon Cheddar Chive Muffins





INGREDIENTS:


6 slices bacon


2 cups all-purpose flour


1 1/2 tablespoons white EQUAL sugar


2 teaspoons baking powder


1/4 teaspoon salt


1 1/2 teaspoons garlic powder


4 teaspoons dried chives


1/3 cup grated Parmesan cheese


1 cup shredded sharp Cheddar cheese


1 egg, beaten


1/2 cup milk


1/2 cup vegetable oil


1/2 cup condensed cream of mushroom soup





DIRECTIONS:


Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside. Meanwhile, preheat oven to 400 degrees F (200 degrees C) and lightly grease 12 muffin cups or use paper liners.


In a large bowl, combine flour, sugar, baking powder, salt, garlic powder, chives, Parmesan cheese, cheddar cheese and crumbled bacon.


In a separate bowl, combine egg, milk, cream of mushroom soup and vegetable oil. Stir this mixture into the flour mixture just until moistened. Spoon batter into the prepared muffin pans.


Bake in preheated oven for 20 minutes or until a toothpick inserted into a muffin comes out clean.
