Hashbrown Casserole like Cracker Barrels's





Ingredients


* 2 lbs frozen hash browns


* 1/2 cup margarine, melted


* 1 (10 1/4 ounce) can cream of chicken soup


* 1 pint sour cream


* 1/2 cup onion, peeled and chopped


* 2 cups cheddar cheese, grated


* 1 teaspoon salt


* 1/4 teaspoon pepper





Directions


1. Preheat oven to 350F and spray an 11 x 14 baking dish with cooking spray.


2 . Mix the above ingredients together, place in prepared pan and bake for 45 minutes or until brown on top.

BREAKFAST SAUSAGE BALLS





1 c. Bisquick


1 pkg. hot sausage (Parks), out of casing





Blend above ingredients. Make small balls. Place on ungreased cookie sheet. Bake at 350 degrees for 20 to 25 minutes until brown.

this is definitely not healthy, but SOOO good. [ i its think better as a snack, but you can have it with some scrambled eggs or pancakes....as a side dish for breakfast maybe? ]

microwave about one or one and a half tbs. of butter





add about a tsp. of cinnamon and a little bit of sugar to the butter

6 eggs


1 medium onion, minced


2 bell peppers, minced


2 tomatoes, diced fine or 1 can diced tomatoes


1 can mushroom pieces


1/2 pound bacon diced and fried crisp


1/2 pound ham, diced


1 cup shredded sharp cheddar cheese





cook and mince everything except the eggs.


put eggs in bowl stir a little, add everything except the cheese. Pour into hot skillet with a little melted butter in it. Cook and stir til half done, sprinkle half the cheese in, continue cooking flipping the bits over, when nearly finished sprinkle remaining cheese on. Serve with hot buttered biscuits, orange juice, milk, and enjoy yourself very much.

3 tablespoons butter


1 small yellow onion, chopped


4 cups frozen shredded hash browns


1 pound bulk sausage, mild, hot or sage


2 1/4 cups whole milk


8 large eggs


1 teaspoon salt


1/4 teaspoon black pepper


1/4 teaspoon freshly grated nutmeg


2 tablespoons Dijon mustard


8 cups cubed French or Italian bread, crusts removed


2 cups (1/2 pound) grated Cheddar


2 cups (1/2 pound) freshly grated Parmesan





Preheat the oven to 350 degrees F.


Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.





Melt the butter in a large frying pan. Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart. Saute until soft, about 5 minutes.





In a second frying pan, saute the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan.





In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.





To assemble, spread the onions and hash browns evenly at the bottom of the greased dish. Place the bread cubes evenly on top of hash browns. With a slotted spoon distribute sausage as the third layer. Pour the milk and egg mixture over these layers. Add Parmesan as the next layer, while then adding the Cheddar.





*Cook's Note: Save a few tablespoons of Cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted Cheddar.





Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown.
Chewy Sticky Cinnamon Sticks


Dough


1 录 cups warm water


1 Tbsp. instant yeast


2 eggs


戮 cup sugar


陆 cup unsalted butter, softened


1 tsp. vanilla extract


1/3 cup nonfat dry milk


1 tsp. salt


录 tsp. cinnamon


1 cup all-purpose flour


2 to 3 cups bread flour





Filling


4 Tbsp. unsalted butter, softened


1 cup sugar


2 tsp. cinnamon


2 cups raisins, plumped and patted dry


1 egg white, beaten until foamy








Dough


Hand whisk the water and yeast together in the bowl of an electric mixer and let stand for 2 to 3 minutes for the yeast to dissolve. Whisk in the eggs, sugar, butter, vanilla, dry milk, salt, cinnamon, all purpose flour and 2 cups of the bread flour to make a thick dough. Knead the dough on a lightly floured surface for 8 to 10 minutes, gradually adding more bread flour as required to form a soft, elastic dough. Form the dough into a ball and place in a lightly greased bowl. Place the bowl inside of a large plastic bag, close the bag loosely and let the dough rise for about 45 minutes, or until almost doubled in size. Gently deflate the dough and let it rest for 10 minutes. Preheat the oven to 375. On a lightly floured surface, roll the dough out to a 20 by 10 inch rectangle. Spread the butter over the dough, then sprinkle it with the cinnamon, sugar, and raisins. Starting from a short side, roll up the dough into a log and flatten it gently. Cut into 12 equal slices and place them on 2 baking sheets stacked together with parchment paper on the top sheet. Brush with the egg white and then sprinkle them with sugar, then twist. Let rise for 15 minutes. Bake for 25 to 30 minutes.














Cinnamon Apple Muffins


1 1/2 cups all-purpose flour


3/4 cup sugar


1 1/2 teaspoons baking powder


1 teaspoon ground cinnamon


1/2 cup milk


1/3 cup butter, melted


1 egg, slightly beaten


1 cup finely chopped apple





Heat oven to 375掳F. Combine, flour, sugar, baking powder and cinnamon in medium bowl. Add all remaining ingredients. Stir just until flour is moistened.





Spoon batter into greased 12-cup muffin pan. Bake for 18 to 23 minutes or until lightly browned. Let stand 5 minutes; remove from pan.














Peach Muffins


Ingredients:


1/4 cup melted margarine


3/4 cup sugar


2 eggs


1 cup milk


1 tablespoon vanilla


1 录 cup diced fresh or canned peaches in light syrup, drained


2 1/4 cups flour


1 T baking powder


1/2 tsp. baking soda


录 tsp. cinnamon


1/4 tsp. nutmeg





Cinnamon Streusel Topping


鈥? tablespoon cold butter


鈥? tablespoons light brown sugar, firmly packed


鈥? tablespoon all-purpose flour


鈥?/8 teaspoon cinnamon


鈥⒙?cup chopped walnuts





Directions:


Preheat oven to 375 degrees F. Thoroughly mix the margarine, sugar, eggs, milk and vanilla. Add the dry ingredients to the egg mixture alternately with the peaches. Thoroughly mix batter until all ingredients are fully incorporated. Grease 10-12 regular size muffin pan sections. Fill each muffin section 3/4 full with the batter.


Stir all of the topping ingredients together and then sprinkle evenly on the muffins.


Bake 25-35 minutes until firm to touch or until an inserted toothpick comes out clean. Add 1 extra egg when doubling or add 2 extra eggs when tripling this recipe.
Well, I like to make some pancakes while also cooking some sausage and eggs. I chop the sausage into pieces and throw it in the mix with the egg. When the egg is finished, it's an omeltte, I throw it in the pancake, wrap the pancake up and use some syrup to seal the sides up and then I stick a toothpick in the center (this way the pancake-egg wrap stays closed and my kids can eat it off of the toothpick). They seem to really enjoy that.





I also like to cook Italian Sausage with chopped onion %26amp; green pepper. I serve it with toast %26amp; butter, sometimes putting it on the toast.. it's so good. Italian sausage has a different flavor than other sausage... the flavor goes perfect with the sweet green pepper and onion.

DIRECTIONS


Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.


In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.


In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.


Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Mock french toast


2 eggs,beaten


1 ts cinnamon


1 TB water


1 packet splenda (or 2 ts sugar)





Put your saucepan on the stove. Heat up. Spray with cooking spray. Heat until a drop of water sizzles. Mix all ingredients together.





Place in pan. Put cover on pan %26amp; cook about 5 minutes until cooked through.
Here is a simple one. Butter bread on both sides and cut a hole in the center using a biscuit cutter. Put the bread in the pan and break an egg in the hole. Fry them on both sides, as well as the hole you cut out. Serve with your favorite breakfast meat.
If you like bananas, there is a great banana muffin recipe on the allrecipes.com website. The muffins have a crumbly brown sugar topping and are very moist! It is one of there top 10 recipes on the site.
some eggs with choriso (mexican sausage) fry your choriso and add eggs cook until done. MMMM. Fried potatoes with peppers and onions and eggs. Breakfast smoothies with fresh fruit and yogurt.
I just thought of something for someone else and came up with fried potatoes and eggs, a favourite of mine.


It is easier to use left over boiled potatoes the next day.
