Get a ';complete'; pancake mix and substitute cider or apple juice for the water mixing it one cup of mix to one cup of juice. Cook on Med-high in a non-stick pan using canola oil. The cakes will be tender, thin and delicious. Butter (not margarine) and syrup, then enjoy.Does anyone have any quick, easy, breakfast recipes?

Sure do. Chorizo and eggs with tortillas and salsa... I know it's a bit heavy for breakfast but it's quick and easy and you can make a bunch of it fast. Just use chorizo (removed from the skin). Fry that and add eggs. The eggs will scrambly as you cook them with the chorizo. Warm the tortillas and add the chorizo and eggs into the tortilla like a burrito. I put out salsa and shredded mexican cheese for add ons.
My mom used to make her own version of French Toast - make a jam sandwich with 2 slices of bread (no butter, margarine or peanut butter inside, though - just jam - plus maybe slices of banana). She'd dip the whole sandwich in the egg mixture and fry it at medium heat. No need for syrup, etc. because the jam was already inside. We'd look forward to those - they were delicious!
Fritatta's are the way to go!!
You can put anything you want in them and it only takes one pan.
I know you are sick of eggs but if you put enough stuff that you like in it the eggs become just the binder.
My favorite quick breakfast is peanutbutter and toast.
My son loves homemade breakfast burritos. I get the large, flour tortillas to make them. I make a batch of scrambled eggs and while they are still hot, add shredded mild cheddar cheese or cheese with mexican seasonings already added, crumbled up cooked bacon and some salsa. Mix it all together, put some in a warmed tortilla and roll it up. They are SO good.
I pre-make breakfast burritos with sausage, eggs, and cheese. I freeze them in bags of two and when its breakfast time I just take them out of the freezer and microwave them and add salsa!!
Peanut Butter Oatmeal
Mix the following in a bowl:
Handful of dry Oatmeal
2 tbsp. Peanut Butter
1-2 tsp. Honey
Handful of Raisins or Chocolate Chips
This is very filling and easy to make. It can also be shaped into balls and frozen or refrigerated for future snacks.

We do! Holy Hill Gourmet is just introducing our breakfast flapjacks! They are very easy to make and you can use cookie cutters to make interesting shapes for the kids while these flapjacks are cooking. Plus our jams are nothing but fruit with 1/3 less sugars so they can top them with fruit and a squirt of low fat or low sugar whip cream. The flapjacks come in strawberry, orange poppyseed, raspberry, chocolate chip and mixed berries. The jams are sold seperately on the holy hill gourmet web site. Its a fun way for kids to get a good hot breakfast that is quick and hot especially on the weekend mornings.
Have you tried Chinese congee? Kids can swallow it easily and it tastes nice. We Chinese used to feed babies and toddlers with congee warm. It's nice, fit for adults and kids and can be very nutritious. We eat congee when we are sick, too. Buy a rice cooker with congee cooking application. Put rice and water as instructed by the pamphlet which comes with the cooker (different cookers differ). You can cook pure congee, meat ball congee, fish 'fillet' congee, chicken congee and beef congee... almost anything can go with congee and it is very good for kids. The only thing is it needs a little bit of time -- 45 mins. perhaps. You can put the ingredients inside the cooker and then do your chores like dress up yourself and wake up the kids etc. When everything is done and everyone ready, the congee is ready. You can also add hot water in to quicken the cooking time. If you don't mind eat reheated food, you can cook the congee before going to bed and keep it refrigerated. Reheat it over the stove (until simmer), in the microwave or in the cooker. A definite must try.

What i love to do since i have a fast paced job and often either miss lunch or eat late- I get one fat free vanilla yogurt (the smaller ones) and I mix honey granola with it. It is filling and healthy, usually last me through till lunch time or later.

I got my kids one of those sandwich makers and they can make french toast sandwiches, pb%26amp;j toastees and even yummy egg and cheese sanwiches. The really love creating their own fun combos and they get a hot breakfast they have even use pancake mix to make stuffed pancakes. You could also get a Magic Bullet and teach them to make smoothies. Baked French Toast
Ingredients
1 C. firmly packed brown sugar
1/2 C. margarine
2 Tbs. light corn syrup
8 slices thickly sliced bread
6 eggs
1 1/2 C. milk
1 tsp. vanilla
1/8 tsp. salt
Directions
In a saucepan combine brown sugar, margarine and corn syrup. Bring to a full boil, reduce heat to medium and simmer until thickened (approx. 2-3 minutes). Pour mixture into a greased 9x13-inch baking dish. Place bread evenly in pan. Beat eggs and add all other ingredients. Pour over bread. Cover and refrigerate overnight.
In the morning, bake, uncovered 45 minutes in a 350-degree oven, until light brown.
Serve with warm syrup.
In the South, we call it Mush but in the North they call it Polenta. It tastes similar to cream of wheat but better. After you make it according to the recipe below, add milk and sugar; pancake syrup; or brown sugar and cinnamon to it. You can also make it the night before and pour it into a loaf pan while it is still hot; then in the morning just slice it like bread and fry it. Serve with syrup poured over it or jam like French Toast.
Polenta, the Italian answer to cornmeal mush, is tasty, extremely versatile, and an ideal accompaniment to all sorts of things. Though it can be bought ready-made, purists are correct in saying that what one makes at home is better.
INGREDIENTS:
* 1 pound or slightly more (500 g) coarsely ground corn meal
* (you want corn meal the consistency of fine to medium-grained sand, not flour)
* 2 quarts (2 liters) boiling water (have more handy)
* A heaping teaspoon of salt
PREPARATION:
Set the water on the fire in a wide bottomed pot and add the salt. When it comes to a boil, add the corn meal in a very slow stream (you don't want the pot to stop boiling), stirring constantly with a wooden spoon to keep lumps from forming.
Continue stirring, in the same direction, as the mush thickens, for about a half-hour (the longer you stir the better the polenta will be; the finished polenta should have the consistency of firm mashed potatoes), adding boiling water as necessary. The polenta is done when it peels easily off the sides of the pot.
Serves 4.
Quesadillas! If you eat meat, you can add ham, as well as precooked bacon or sausage. Anything that's good in an omlette is good in a quesadilla.
What about some Pancakes.You can buy the mix ready or make your own batter night before and away you go.......Think of all the toppings you have to choose from.........Go for it, kids will love them...
Breakfast Parfait
in a tall cup layer thawed frozen strawberries
a dollop of your fave yogurt( lemon, blueberry etc)
a layer of granola alternate with strawberry or any fruit
to the brim
Buy your favorite frozen waffles and some berries or bananas, or peaches and some plain yogurt. After toasting the waffles, top with some fruit and 1/2 cup plain yogurt, sprinkle with sugar or splenda, now you have a yummy, easy breakfast.
