I'm looking for something quick and easy- less than an hour to make would be great. The recipe needs to be for eight people and if anyone has any suggestions for side items that would go well with the casserole I would like to hear them. Thanks!What are some tasty breakfast casserole recipes?

Jimmy Dean Breakfast Casserole
1. 1 pkg.Regular Flavor Jimmy Dean Pork Sausage
2. 10 eggs, lightly beaten
3. 3 cups milk
4. 2 teaspoons dry mustard
5. 1 teaspoon salt
6. 6 cups cubed bread
7. 2 cups shredded sharp Cheddar cheese
8. 1/2 teaspoon black pepper
9. 1/2 cup sliced mushrooms (optional)
10. 1 medium tomato, seeded and chopped (optional)
11. 1/2 cup thin-sliced green onions (optional)
Preheat oven to 325 F. In large skillet, cook sausage over medium-high heat, stirring frequently until thoroughly cooked and no longer pink. In large mixing bowl, combine eggs, milk, mustard and salt; stir well. Distribute half the bread evenly in a buttered 9'; x 13'; x 2'; baking dish. Sprinkle with half the pepper, half the cheese, half the sausage and half of each optional ingredient. Repeat layering using remaining bread, pepper, cheese, sausage and optional ingredients. Pour egg mixture evenly over casserole. Bake uncovered for 55-60 minutes, or until eggs are set. Tent with foil if top begins to brown too quickly.
Hash Brown Casserole
* 1/2 cup finely chopped onion
* 1/4 cup finely chopped celery
* 1 1/2 tablespoons butter
* 1 can (10 1/2 ounces) cream of celery soup
* 1/3 cup milk
* 1 small package (3 ounces) cream cheese
* 4 cups (loose pack) frozen hash brown potatoes
* 1/2 cup shredded sharp Cheddar cheese
In a saucepan, saute onion and celery in butter slowly until tender. Add soup, milk, and cream cheese; cook over medium low heat, stirring, until smooth. Combine potatoes and onions in a large bowl; stir in the soup mixture. Pour into a 10x7x1 1/2 inch baking dish; cover with foil. Bake at 350掳 for 1 hour and 15 minutes, or until potatoes are tender. Remove foil and top with the shredded cheese. Return to oven to melt cheese.
Note:
May be assembled ahead and refrigerated up to 12 hours before baking.
Black Hills Golden Egg Bake --
INGREDIENTS
1/2 cup sliced fresh mushrooms
1/2 cup chopped green pepper
1/4 cup butter, cubed
10 eggs
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 (16 ounce) container small curd cottage cheese
2 cups shredded Cheddar cheese
2 cups shredded Monterey Jack cheese
1/2 pound bulk pork sausage, cooked and drained
6 bacon strips, cooked and crumbled
1 (2.25 ounce) can sliced ripe olives, drained
DIRECTIONS
In a skillet, saute mushrooms and green pepper in butter until tender. In a mixing bowl, combine eggs, flour, baking powder and salt if desired; mix well. Add mushroom mixture. Stir in remaining ingredients; mix well.
Pour into a greased 13-in. x 9-in. x 2-in. baking dish. Bake, uncovered, at 400 degrees F for 15 minutes. Reduce heat to 350 degrees F; bake 25-35 minutes longer or until a knife inserted near the center comes out clean.

Cheesy Ham and Hash Brown Casserole --
INGREDIENTS
1 (32 ounce) package frozen hash brown potatoes
8 ounces cooked, diced ham
2 (10.75 ounce) cans condensed cream of potato soup
1 (16 ounce) container sour cream
2 cups shredded sharp Cheddar cheese
1 1/2 cups grated Parmesan cheese
DIRECTIONS
Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
In a large bowl, mix hash browns, ham, cream of potato soup, sour cream, and Cheddar cheese. Spread evenly into prepared dish. Sprinkle with Parmesan cheese.
Bake 1 hour in the preheated oven, or until bubbly and lightly brown. Serve immediately.

INGREDIENTS
1 (16 ounce) package ground pork breakfast sausage
12 eggs
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can milk
1 (4.5 ounce) can sliced mushrooms, drained
1 (32 ounce) package frozen potato rounds
1/2 cup shredded Cheddar cheese
DIRECTIONS
Place sausage in a skillet over medium-high heat, and cook until evenly brown. Drain, and set aside.
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
In a large bowl, beat together the eggs, condensed cream of mushroom soup, and milk. Stir in the sausage and mushrooms, and pour into the prepared baking dish. Mix in the frozen potato rounds.
Bake in preheated oven for 45 to 50 minutes. Sprinkle with cheese, and bake an additional 10 minutes, or until cheese is melted.
BREAKFAST CASSEROLE
1 pkg. tater tots
8 eggs
2 c. half %26amp; half or evaporated milk
1 lb. bulk sausage
2 c. cheddar cheese, grated
1 tsp. dry mustard
1 tsp. salt
1/4 c. chopped onion (opt.)
Place a layer of tater tots in the bottom of a large cake pan or casserole dish. Brown and crumble sausage, drain. Mix together eggs, milk, mustard and salt, beat well. Add sausage to egg mixture and pour over tater tots. Sprinkle cheddar cheese on top. Let casserole refrigerate overnight. Bake in morning at 350 degrees for 45 minutes.
Side items: Fruit

EASY BREAKFAST CASSEROLE
1 lb. sausage, bacon or ham
3/4 c. sharp cheddar cheese
1/2 c. mushrooms %26amp; pieces
5 eggs
1 3/4 c. milk
6-8 slices of bread (cubed)
Place cubed bread in casserole dish, put cooked sausage, bacon or ham on top. Add sharp cheese, mushrooms on top of meat.
Beat eggs, milk, salt and pepper, pour over top.
Let stand 5 minutes then bake at 350 until brown (35 minutes).
This is the one I make for my family
1 large package of shredded hash browns
3 lbs of breakfast sausage
1 green pepper diced fine
1 small onion diced fine
1 dozen eggs beaten
1- 3 cup package shredded cheese
Place hash browns in greased baking dish, bake at 350 for 15 minutes. While this is baking fry crumbled sausage until done, drain. remove potatoes from oven. mix eggs, sausage, peppers and onions pour over potatoes. sprinkle cheese on top and return to oven and bake another 15 minutes or until eggs are set.
You can serve biscuits with them
