I'm a college student (well, on summer break, but still). My mornings are usually pretty busy, and I generally don't have time to make a big breakfast (ie: eggs, bacon, pancakes). Besides, I get tired of eating the same breakfast foods every morning. Don't get me wrong...I love eggs and bacon. It's just a pain to make all that on a school morning, and I usually tend to get hungry not long after. So, I usually end up running through McDonalds drive-thru. I'm unbelievably sick of that, as well.
So, what I'm wondering is if anyone has any relatively healthy, quick and filling recipes for breakfast besides the same-ole-same-ole. No oatmeal or scrambled-egg sandwiches, please. Gimme some p'zaz to start the day off (and make it snappy, plz, mmmk, thks) *grin*Filling, quick breakfast recipes besides the same old thing?
Since you want something quick different from the norm, I'm assuming you don't feel like making something the night before.
As far as something filling, you need specialized protiens. THe stuff most people think of as a normal breakfast is mostly starches. They are mostly sugar and tend to burn up quickly, which means you burn out. Honestly, when I was having this problem, I just bought some of the Slim Fast Optima shakes, and one would at least hold me until lunch.
If you want an easy recipe, here's the best I can offer, though it is a bit plain.
Wheat Bread, Lettuce, Tomato, sausage, and cheese.
Just toast the bread (You can spread mayo if you want.)
One leaf of lettuce, one tomato slice.
Use ground sausage, (usually comes in a tube of some sort)
Sqeeze out the desired amount of sausage and press into a thin patty. (The thinner it is the quicker it cooks.)
Cook the patty, lay a slice of your favorite cheese on top of the sausage to melt a little.
Place on bread.
It's a great sandwich and you can change out the meat as you'd like.
You could use ham slices, or make tuna salad with apple chunks instead of relish.
You could also trade up the bread for a bagel once in a while. I've tried the sausage and cheese on a blueberry bagel once, and it was surprisingly good.
It's kind of basic, but if you keep sliced tomatoes in a container and already have a head of lettuce, there is almost no work involved in making it. Plus it's surprisingly filling with a glass of milk or orange juice.
It should stick with you for a little longer than a bowl of cereal or some other sugar based item.Filling, quick breakfast recipes besides the same old thing?
Yogurt w/ granola, its high energy... bring a banana w/ you to eat 1 1/2 hour later.
You can buy small raspberry yoghurt containers, and eat that and you can eat fresh fruit. Drink Water. Helps with concentration too. Cheap

Recipe for Bircher Muesli!
From Catholic Chronicle, Diocese of Toledo, some time ago:
Biechermuesli - Swiss
3 cups of oatmeal
@ 6 cups of milk (can use combination of yogurt and milk)
1-3 Tablespoons of honey
1/2 - 3/4 cup of raisins
Soak overnight, then add the next morning:
Fruit of the season - 1 cup each to 3 cups
Unskinned fruit is okay
1-3 Tablespoons of orange rind
Decorate with nuts
Ziplock Bag Omelet.
All you have to do is put 2 eggs and whatever else you want in it ( ham, cheese,mushrooms, etc. ) shake it up and put it in a pot of rapidly boiling water for EXACTLY 13 minutes. And out comes a perfect omelet.
Don't use the thin sandwich baggies though. they will burst open.
Use the strong blue kind.
I do it quite a bit. My family loves them, and everyone gets exactly what they want in their omelet.
We've put up to 6 in a big pot. But for one, just use a small one.
You can have everything cut up and ready the night before.
The night before try taking some yogurt and fresh fruits and mix it all together. Throw it into a bunch of plastic cups and put them all in your freezer. When you wake up take them out, by the time youre done showering they'll be thawed, throw some granola on and head off to class. Surprisingly it works rather well and last till lunchtime.
2 eggs
3 tablespoons Worcestershire sauce
1/2 teaspoon hot pepper sauce (e.g. Tabasco鈩?
salt and pepper to taste
4 slices sandwich bread
6 slices cooked ham
3 ounces Cheddar cheese, sliced
1 tablespoon vegetable oil
DIRECTIONS:
In a medium bowl, whisk together eggs, Worcestershire sauce, and hot pepper sauce. Season with salt and pepper. Pour mixture into a wide, shallow dish.
Layer 2 slices bread with equal amounts of the sliced ham and cheese; top with remaining bread slices to make sandwiches, and press down to secure filling. Dip sandwiches into egg mixture, and turn to coat both sides.
Heat the oil in a griddle or frying pan over medium heat. Cook sandwiches 3 minutes on each side, or until golden brown and cheese has melted.
there are alot of variations to breakfast burrito's, you can make up the meat's ahead of time,, then all you have to do is cook up your eggs add what you want ,cheese, vegie's, etc ,heat tortilla roll everything together and go!!!! works for us good luck,,,,,....
Some things I tried were cold cereal with fruit.....or just put some ceral into a bag and grab like a banana or something to go if you are in a big rush.......Others could be breakfast bars, peanut butter on toast with oj (could put into a sports bottle so easy to grab and go) or a banana., pb sandwhich with banana slices in the middle......Just make for sure that you try to at least cover a few of the basic food groups so that you dont get hungry shortly after (such as protein, fruit, and carbs, etc..).
French Toast, especially if you make the batter the night before.
And you can very easily spice up oatmeal with raisins, craisins, or other dried fruit.
bagels with cream cheese
try M眉sli with yogurt and a tablespoon with trail mix..some fresh fruit of the season...
Crock-Pot Breakfast Cobbler
4 medium-sized apples, peeled and sliced
1/4 C. honey
1 t. cinnamon
2 T. butter, melted
2 C. granola cereal
Spray inside of Crock-Pot with nonstick spray. Place apples in slow cooker and mix in remaining ingredients. Cover and cook on low 7-9 hours, or overnight (alternately, cook on high 2-3 hours). Serve with milk.
Makes 4 servings.
Open face grilled pepper jack cheese on whole wheat bread. Just put in your toaster oven. Add a piece of fruit and you're good to go.
Soup is an easy, potentially nutritious and filling breakfast.
Oh and cold tacos or pizza.
Make a breakfast burritto. Thay are quick and easy
Scamble an egg - or I use southwestern EggBeaters
put into a soft flour tortilla shell
add some shredded cheese (I use the Taco Blend)
top with Ortega Taco sauce and wrap

These rolls are light and airy, but have a nice sausage filling that might tie you thru to lunch time..You can make these ahead of time, store them in the refrigerator and just microwave them when you ready for them.
I make these for my Aussie husband and they don't stick around here long.
The pastry dough you can find in any frozen food section of the store.
This can be made the night before and put in the fridge, then in the morning just cook.
Breakfast Casserole Recipe
2 tablespoons butter
1/8 teaspoon pepper
2 tablespoons flour
2 cups milk
12 eggs
1 lb bacon, chopped
1 cup shredded cheddar cheese
1/4 cup onions, chopped
1 can mushroom stems and pieces
1 1/2 cups soft breadcrumbs
3 tablespoons melted butter
1/8 teaspoon paprika
melt butter.
blend in flour and pepper.
gradually add milk and stir until thickened.
add cheese, mix and set aside.
fry bacon and onions until browned.
add eggs and scramble just until set.
add mushrooms and cheese sauce and put into a greased baking dish (9x13).
mix breadcrumbs with 3-tblsp.
melted butter and paprika and sprinkle over egg mixture.
CHILL for 30-minutes at least OR put in fridge overnight.
to serve bake for 30-minutes in a 350 degree F oven
