Breakfast recipes..?

Does anyone have great easy breakfast reciepes?


My mother broke her ankle and usually has all of her kids and our kids over for breakfast every other Sunday-in order to have us all together-and she cant cook at the moment-So Id like to bring things over. Seeing that its my first year not living at home - im not a pro cook and i dont have much for ingrediants.


There is going to be 17 of us(lol thats not all of us either!)Breakfast recipes..?
T his recipe is alot of fun and really easy.


PUFFED PANCAKE,you will need;


6 eggs


11/2 cupsmilk1 cup flour(unbleached)


3 tbls. sugar


1tsp. vanilla


1/4 tsp. cinnamon


6 tbs. butter or marg.


on the side syrup,jelly,or whatever for serving


12'; cast iron skillet or oven proof skillet








Preheat oven to 425'


In a blender or bowl if you want mix together eggs,milk,flour,sugar, vanilla,%26amp; cinnamon,until just combined. About 15 sec. by blender. The batter should be lumpy.


Melt butter or marg. in the 12' skillet by putting in oven for about 30 seconds.


Remove skillet from oven andspread the butter to coat the bottom and sides of skillet, and pour in th ebatter.Return skillet to middle rack and bake for about 20 mins., or until the pancake is PUFFED and lightly brown. (DO NOT CHECK B/4 17 mins. have passed, and close the oven door slowly and carefully after checking.)


Cut into wedges and sreve right away with your jam, syrup, etc.


You could serve with some fresh fruit and or eggs.





My grandkids and children at the time were always so surprised to see what came out of the oven. hope your moms ankle is feeling better.





P.S. You could always go w/a variety of cereals and toppings!!Breakfast recipes..?
I would make mini muffins tonight and honey cinnamon butter and some scones or biscotti...I also would add fruit,cheese and ham kabobs.Everyone one can snack and visit while everything is being cooked.


I think biscuits and gravy is a nice choice


Sliced ham is easy to warm in the oven,but so is sausage and bacon....


Breakfast Strata


Quiche a couple different kinds.


Eggs are hard to make ahead of time,below is one for you with good results.


Somebody also needs to bring coffee,milk and juice.


A couple loaves of homemade bread or rolls.

Make Ahead Scrambled Eggs

2 dozen eggs scrambled


1/2 cup milk


1 can cream of mushroom soup


1 can mushrooms, drained


1/2 cup chopped green pepper


1/2 cup chopped onion


1 cup Velveeta cheese, cubed

In the morning or the night before,


Scramble eggs (cook), put in 9 x 13 pan, combine milk and


soup and pour over eggs. Top with cheese cubes, mushrooms,


onions and green pepper. Refrigerate at this point to re heat


in the morning. Bake covered at 300 for one hour.


You can place hashbrowns in the bottom of casserole..





Sweet Banana Bruschetta





5 thick slices Sweet Hawaiian bread, egg bread or raisin bread (1/2 to 3/4 inch


thick slices)


1 medium banana, mashed


1/4 cup tub cream cheese with pineapple


2 medium bananas, thinly sliced


1 T. butter or margarine, melted


2 T. packed brown sugar


Chocolate flavor syrup, optional





Preheat broiler. Cut bread slices crosswise in halves or thirds. Lightly toasted


bread and let cool. Combine mashed banana and cream cheese in medium bowl.


Spread some of the mixture over each toasted bread slice. Place slices on baking


sheet. Arrange banana slices on top of cream cheese mixture. Brush bananas with


melted butter. Sprinkle with brown sugar. Broil Bruschetta 4 to 6 inches from


heat for 30 to 60 seconds or until banana slices just begin to glaze. Sugar will


melt. If desired, drizzle with chocolate sauce(if desired). Serve warm.

Fluffy Instant Donuts





A delicious, inexpensive, and easy way to make


'homemade' donuts that your whole family will love.


This recipe also works well for funnel cakes!





Ingredients


1 (18.25 oz.) package moist cake mix, any flavor


1/2 C. flour


4 eggs


1 1/4 C. water


3 C. oil for frying, or as needed


1/4 C. confectioners' sugar for dusting





Directions


In a large bowl, combine the cake mix, flour, water,


and eggs. Beat with an electric mixer on low speed for


5 minutes, or until batter is free of lumps. Heat oil


in a large, deep skillet until it reaches 375 degrees


F (190 degrees C). Using a small scoop equal to about


2 Tbs., carefully drop batter into hot oil in batches


so as not to overcrowd. Cook donuts in hot oil for 5


minutes, or until golden brown, flipping once with a


fork mid-way through for even cooking. Carefully


remove donuts from oil with slotted spoon or tongs,


and drain on paper towels. Dust with confectioners'


sugar before serving.


Makes 56 servings








You kids are gonna make momma proud.No fast food stuff...she wouldn't do that to you...
Pancakes and fruit salad are easy.





For the fruit salad, just go to the store and grab all of the random ';breakfasty'; fruitsyou can find: strawberries, blueberries, raspberries, peaches, pineapples, bananas, cherries...


and chop them into small-ish pieces, and combine in a bowl.





This is a recipe for vegan pancakes... that way everyone and anyone will be able to eat. It calls for soy milk, but you can use rice milk, hemp milk, almond milk... crap, you could even use regular milk. These pancakes are absolutely delicious, though, so easy to mix together, and fast to make. If you have kids that you're cooking for, throw in some chocolate chips and they will be amazed!





You should probably double or triple the recipe...











Favourite Classic Pancakes





You鈥檒l become an expert pancake maker when you try this recipe. For an added treat, toss bits of fresh or dried fruit, nuts, or chocolate chips into the batter.





1 cup unbleached all-purpose flour


1 Tbsp. sugar


2 Tbsp. baking powder


1/8 tsp. salt


1 cup soy milk


2 Tbsp. vegetable oil


鈥?Combine the flour, sugar, baking powder and salt in a bowl and mix thoroughly. Mix in the soy milk and oil, and with a fork or wire whisk, combine just until the batter is smooth.


鈥?Pour cup batter onto a hot, oiled griddle. When bubbles form in the centre of the pancake, flip. Cook for another 2 minutes. Remove from pan and keep warm while you make remaining pancakes.


鈥?Serve warm with maple syrup or fruit syrup.





Makes 6 to 8 pancakes
Scrambled eggs, potatoes, and fruit.


Add 1 Tbs milk for each egg used and whisk together. Pour into a preheated skillet and cook on medium heat until done.


Dice one potato for every two people, a white onion, and a small bunch of cilantro. Fry in a covered, oiled skillet until the potatoes are easy to pierce with a fork/knife.


Oranges are an easy fruit since you can peel and section each one before hand. Everyone can eat as many sections as they want.


Breakfast is served!
INGREDIENTS:





* 6 slices bread, cubed


* 1 pound sausage, browned, drained


* 1 1/2 cups shredded Cheddar cheese


* 8 each eggs, beaten


* 2 cups milk


* 1 teaspoon, salt


* pepper to taste





PREPARATION:


Cube bread and place evenly in greased 9x13 pan or baking dish. Sprinkle evenly with sausage and cheese. Mix eggs, milk, salt and pepper. Pour over ingredients in pan. May cover and chill overnight.


(if left overnight, remove from refrigerator 15 minutes before baking). Bake 45 minutes at 325 degrees or until set. Cut into squares to serve.


Serves8 to 10
OMG 17 THATS A LOT


BUT YOU SHOULD JUST DO SOME PANKCAKES THATS NOT TOO HARD ! %26amp; PLUS YOU CAN DO IT A NIGHT BEFORE AND THEN HEAT THEM UN IN THE MICROWAVE....


Also when you are doing the pankcakes you should cut small pieces of fruit ( ur fav fruit ) and put it in the mix of the pankcake so it will have it also.


You may also buy .... A gallon of already made chocolate milk and served that too!


Another thing is that if you have kids at the house you can give them cereal i mean hello its not such a hard work!


and all that breakfast its really healthy

Go to McDonalds and buy 17 Sausage Biscuits. It will be cheaper.
you can make a big batch of scrambled eggs with stuff (whatevers in the fridge--meat, veggies, whatever). Or, personally I'd hit allrecipes.com for some great breakfast/brunch recipes that feed a crowd. The website will scale the recipe for how many servings you need.





My personal favorite is a nice hashbrown/egg/cheese casserole....yum!

I am answering this assuming you know how to make paranthas.





Just make partially cooked paranthas before everyone arrives. lets say 3 or 4 for each person and when everyone is there just fry them and serve them hot with butter/curd/picles. hope this helps.
I agree scramble eggs with fixins or a couple of breakfast casseroles are the easiest and can be served with Paula deens tomato grits (double the recipe for that size group if they like grits) and prepared biscuits would be just fine. However, muffins can be made ahead. Also, sausage gravy and biscuits with fruit makes a good breakfast.
Breakfast Casarole








1 bag Hashbrowns


1 lb.Sausage


1 dz. Eggs


1 cup Milk


3 cups Cheddar Cheese


Salt


Pepper











Brown sausage and drain fat.


Spray bottom of a 9x13 pan.


Put hasbrowns in ,then sausage.


Add layer of cheese.


Mix eggs %26amp; milk and pour over top.


Salt and pepper to taste.


Cover with Aluminum Foil,uncover at least the last 10 min to brown the top.


Bake at 350F for at least 1 hour and 15 min or so.





you can add bacon or onions to it too ,it is up to you what you think people would like.Make 2-3 of this dishes and you good to go for 17 people.

Easy El Rancho Monterey Jack Sausage Egg Casserole Recipe








3 small cans diced green chiles


1-1/2 pounds grated Monterey Jack cheese


1 lb sausage (browned) , your choice


12 large eggs


1 large can evaporated milk*


Paprika


Flour


A little salt, black pepper, depending on the sausage used


*NOTE: This makes the dish so very creamy.





Directions


Butter 9x13 glass casserole dish, sprinkle with flour.


Layer green chiles, sprinkle small amount of flour, paprika and salt. Top with *browned* sausage,


Sprinkle Monterey Jack grated cheese on top evenly


In large bowl, whisk eggs and milk together,


Pour *carefully* over the layered chilies, sausage, cheese


Sprinkle with paprika


Bake at 325 degrees.30 to 45 minutes


SO EASY and DELICIOUS

You don't want to be stuck in the kitchen making pancakes or eggs for 17 people. An overnight casserole will allow you to enjoy your family and not stress on Sunday.





Overnight Blueberry French Toast (12 servings)





1 (14-ounce) loaf french bread or italian bread


1 (8-ounce) pkg light cream cheese -- cut in small pieces


1 cup fresh or frozen blueberries


12 large eggs


2 cups milk


1/3 cup real maple syrup


1/2 teaspoon ground cinnamon


butter -- for coating pan





Butter a 13x9-inch glass baking pan generously.





Tear bread into one-inch cubes; place half into prepared pan. Evenly distribute cream cheese pieces over bread; cover with blueberries. Place remaining bread cubes on top.





In a large bowl, beat together eggs, milk, syrup and cinnamon; pour over bread cubes. Cover with foil and refrigerate overnight.





In the morning, preheat oven to 350F degrees. Remove casserole dish from fridge and bake, covered, for 30 minutes. Remove foil and bake for an additional 30 minutes or until lightly browned on top and centre is set.Cut into squares and serve with maple syrup.








Crockpot Granola Casserole (8 servings)





2 cups of your favorite lightly sweetened granola cereal


4 large apples -- peeled and thinly sliced


1/4 cup honey


1 tsp. cinnamon


2 Tbs. melter butter





Place all ingredients into the crockpot -- apples on the bottom. Cover and cook on low for 7 to 9 hours. Best served with milk.











Microwave Oatmeal Bars (8 servings)





2 cups quick-cooking oats


1 cup semisweet chocolate chips


1/2 cup packed brown sugar


1/2 cup butter - melted


1/4 cup corn syrup





In a large bowl, combine the oats and brown sugar. Stir in the melted butter and corn syrup. Press mixture into a lightly greased 9-inch square microwave-safe dish.





Microwave on high for 4 minutes. Rotate once midway through cooking if your microwave doesn't auto-rotate.





Sprinkle chocolate chips evenly over the bars. Microwave at on low for 5 more minutes until chips are melting.





Remove dish from microwave and spread melting chocolate evenly over bars. Refrigerate at least 15 minutes before cutting into pieces.





Can be made the night before.
I would just go buy breakfast hun!!


Thats a lot of work, it will be easier and a lot LESS stress.


Its okay to eat fast food once in a while.


There is also a lot of options in grocery stores, they sale frozen breakfast - containg sausages, biscuits, eggs. Everything and they taste good.


You can also just buy some waffels theres like a 48 pack and make them with bacon and eggs, doesn't sound too heard does it??

Since there is a lot of you. Why don't you scramble up some eggs mixing in some peppers, onions, bacon, sausage, ham, cheese, frozen potatos, etc. (or whatever ingredients everyone will like) then wrap in a flour tortilla, serve with salsa.

What do you think about a cereal bar? Bring over 5 or 6 kinds of cereal: granola, cheerios, special K, etc... not the way sugary kind, the healthier kind. Then supply carafes of milk. At the end of the table supply blueberries, sliced bananas, sliced strawberries. Get bowls of almonds and cashews. And have cinnamon, honey, sugar, sugar substitute, and brown sugar at hand. Get creative and supply with more ingredients!
