I am trying to save money and looking for recipes that are cheap but freeze and reheat well for time crunches. I already do pancakes and muffins but all the ideas would be greatly appriciated. Breakfast burritos are easy to make, very inexpensive, full of nutrition. Assemble using burrito size tortillas, eggs, hashbrowns, veggies, real or imitation meats. Assemble the ingredients, wrap in plastic wrap, and store in a freezer ziplock. You can make sandwiches ahead and keep in the freezer, just stay away from ingredients that do not freeze well like mayo, and lettuce and tomato, add those after thawing. Next, you can make rice bowls with vegies, rice and your favorite protein. Just freeze them in a freezer safe container and microwave when you want them. For dinner, casseroles can be made and frozen in individual portions. There are a couple of books on freeze ahead meals. Look on Amazon.com and Sam's club is selling two cookbooks on this subject in their warehouse stores for under $10.Anyone have good cheap and freezable recipes for breakfast and dinner?
Casseroles are easy to make ahead of time and freeze for later meals
Scalloped Ham And Potatoes Casserole
6 potatoes, sliced
1 pound raw smoked ham
3 cups milk (or more)
1 green pepper, chopped (optional)
Flour
Cover the bottom of an oiled baking dish with sliced, raw potatoes.
Sprinkle with flour, one inch square pieces of ham and green pepper, if desired.
Repeat until the dish is full.
Pour in as much milk as the dish will hold.
Bake until the potatoes are tender.
Broccoli Rice
5 cups precooked rice
2 (10 ounce) packages of frozen chopped broccoli, lightly steamed or 3 cups fresh chopped, steamed broccoli
1 can (10.75 ounce) condensed cream of chicken soup
1 can (10.75 ounce) condensed cream of mushroom soup
1 cup water
1 pound grated mild cheddar or American cheese
1 tablespoon butter
1 white onion
Salt %26amp; pepper
Preheat oven to 350 degrees F.
Rice and broccoli should be pre-cooked.
In medium saucepan, cook minced onion in butter until softened and translucent. Add condensed soup and water and cook until it is hot.
Add 2/3 of the cheese and blend well until it is melted, stirring constantly to keep the cheese from burning and sticking on the bottom of the pan.
Blend rice, broccoli, and remaining cheese in a 13'; x 9'; baking pan. Pour the soup cheese mixture over it.
Add salt and pepper to taste.
Bake for 45 minutes until it is bubbly and golden in color.

Make a nice big pot of soup and eat all of it you want for that next meal.
But with the rest of it, put it in cups after it's cooled and freeze with a cover
Makes nice munchkin meals
Make a whole bagful of French Toast from day old bread when eggs come on sale! After it cools put it back in the same bread bag and it can be warmed (after it's thawed) in the toaster!
