Sugar Pie's Blueberry-Stuffed French Toast Casserole
Nonstick cooking spray
9 eggs, beaten
2 cups milk
录 cup melted butter
陆 cup maple syrup
12 cups cubed stale French bread
1 (8 oz.) package cream cheese, cut into small cubes
2 cups fresh or frozen blueberries
Blueberry Syrup or maple syrup (optional)
Preheat oven to 350潞F. Grease a 3-quart rectangular baking dish with cooking spray; set aside.
In a smaller bowl combine eggs, milk, butter, and the 陆 cup maple syrup. Whisk until combined. Place bread cubes in large bowl; add cream cheese and the blueberries. Slowly pour the egg mixture over blueberry-and-bread mixture; gently fold mixture to evenly moisten the bread. Pour into greased casserole dish.
Bake 40 to 45 minutes or until a knife inserted near the center comes out clean. If necessary, cover with foil the last 10 minutes of baking to prevent overbrowning. Let stand 10 minutes before serving. Cut in squares. Serve with Blueberry Syrup or additional maple syrup, if desired. Makes 12 servings.

Sausage Breakfast Casserole
1 lb. breakfast sausage, browned and crumbled (chopped ham is good, too)
12 eggs
2 cups milk
2 tsp. salt
1 cup grated Cheddar cheese
2 tsp. dry mustard
6 cups cubed, stale French or Sourdough Bread
Place cooked sausage on the bottom of a greased 9'; x 13'; baking dish. Add bread evenly on top. Beat eggs, milk, and seasonings. Pour over sausage and bread. Sprinkle cheese on top. Cover with foil. Refrigerate overnight. Before baking, press bread down gently into casserole dish. Bake 350潞 for 50 minutes or until light golden brown and set in center. Serves 8.

Sour Cream Streusel Coffee Cake
Streusel Filling:
录 cup packed brown sugar
录 cup finely chopped nuts (I used pecans)
1 tsp. ground cinnamon
Cake:
3 cups Bisquick
1 cup sugar
1 陆 cups sour cream
录 cup butter, softened
1 陆 teaspoons vanilla
2 eggs
Glaze:
1 cup powdered sugar
2 T. milk
Heat oven to 350潞F. Spray Pam in a bundt pan. Prepare streusel filling and set aside.
Mix rcake ingredients; beat 1 minute.
Spread one-third of the batter (about 1 录 cups) in pan and sprinkle with half of the streusel filling. Repeat. Spread with remaining batter, so you have 3 layers of batter and 2 of stresuael filling.
Bake 45-50 minutes until done. Cool 10 minutes. Remove from pan. Drizzle with glaze.

Done Buttered Biscuits
Yield: 12-18 minibiscuits.
2 cups Bisquick
1 stick butter, melted
8 ozs. sour cream
1. Mix together Bisquick, butter and sour cream.
2. Place by teaspoonfuls into buttered minimuffin tins.
3. Bake in a preheated 400潞F oven for about 15 minutes or until golden brown. Serve with your favorite jelly, jam or preserves. You won't need butter.

i make breakfast taquitos for my kids. scramble eggs with sausage or bacon or ham. then serve in a lightly toasted tortilla. we mexicans heat our tortillas on a comal...you can ';toast'; them on a skillet or frying pan without the oil. the point is they taste a whole lot better than just warming them up in teh microwave. also i serve bisquits with jam or honey. dont forget the juice and coffee!!
In a large skillet I cook tater tots, when they are almost done I throw in a bunch of eggs and oregano, and just scramble it up. It sounds boring, but its sooo good and so simple!
Breakfast burritos are quick and easy. You just take a tortilla (I prefer flour for these), and fill it with pretty much whatever strikes your fancy. I like them with scrambled eggs, jack cheese, chopped tomatoes and green onions. I also add hash browns sometimes. These are great because you can make them up ahead of time and freeze them, then you just pop them in the microwave for a minute or so and you can eat it on the go. They also pack well for a breakfast picnic. Hope this helps!
Pepper and Potato Fritata
2 medium potatoes
3 tbsp. olive oil
1 large onion, thinly sliced
2 garlic cloves, crushed
2 peppers, one green and one red, thinly sliced
6 eggs, beaten
4 ounces sharp cheese, grated
salt and ground black pepper
Wash and boil potatoes for about 10 minutes. Drain and slice thickly. Preheat broiler.
In a large non-stick or well seasoned frying pan, heat the oil and fry the onion, garlic and peppers over moderate heat for 5 minutes or until softened. Add potatoes and continue frying, stirring occasionally until the potatoes are completely cooked and the vegetables are soft. Add a little extra oil if necessary.
Pour in half the eggs and sprinkle with cheese. Add remaining egg, salt and pepper. Finish with a layer of cheese.Continue cooking over low heat without stirring. Half covering the pan with the lid will help set the eggs.
Place under broiler just long enough to seal the top. Cool in the pan for a few minutes before turning out.
You can get the potatoes ready the night before, so it does not take so long in the morn.
Scrabble eggs with chopped ham, chopped onions,chopped cilantro and shredded cheddar cheese with biscuits on top of white rice.
Biscuits %26amp; Gravy
Asparagus and goat cheese omelet. Surprisingly easy, too. use egg beaters or scramble a couple of eggs. Fry, add lightly steamed asparagus and cheese, some chives, salt and pepper!
The night before put all this together:
Bubble bread
-A package of frozen uncooked dough balls
-butter/margarine, usually a stick
-white sugar and/or brown sugar
-cinnamon, a couple of teaspoons mixed in with white sugar
Grease a bundt cake pan well.
Lay a couple of slices of butter/margarine in bottom of pan that has been quartered.
Sprinkle some white sugar+cinnamon and/or brown sugar.
Lay a layer of frozen rolls.
Sprinkle some white sugar+cinnamon and/or brown sugar.
Lay 5 or 6 slices of butter/margarine on 1st layer of rolls.
Repeat the basic process until there are no more frozen rolls.
Cover with a clean dish towel and place in an off oven over night. When you wake up take pan out of oven(remove dish towel)
preheat oven to 350*F and bake until top is golden. When done take out of oven and putting a plate over it, turn it over and lift the pan off.

Pita Sandwiches: On days when I have more time and want a bigger, more substantial breakfast, I break out the pitas, eggs and potatoes.
Pita-Licious Breakfast
Ingredients
2 small whole wheat pitas
2 whole eggs (or 1 whole egg and 2 egg whites)
2 Tbsp., low-fat buttermilk
1 medium baking potato: scrubbed and diced into small 1/2 鈥搃nch cubes
1 green or red pepper, diced
1 small onion, diced
Salt and pepper to taste
Directions
In a nonstick skillet sprayed with cooking spray, cook onion and peppers on medium heat until softened. In small bowl, lightly beat eggs, add buttermilk, add to pan and cook together with vegetables until done. Serve with toasted pita. About 330 calories, 15 grams of protein and 10 grams of fat (no trans fat).
