Saute 1 chopped onion and 1 crushed clove of garlic in a bit of olive oil for 2 minutes. Add very small chopped potatoes and cook for about 4 minutes stirring all the time so it does not stick to the pan.
Add chopped capsicums and tomatoes and stir around. Top with two eggs each and cook until the eggs are done. Add salt and pepper.
Serve with toast.

I do this boy friendly thing that is 1 pot and too easy. You need 1 small onion, 1 cob of corn, 1 can of diced tomatoes or a few you chop yourself, enough chopped bacon for both of you, toast for both,
Heat pot on stove, add in this order, bacon that is chopped, when its getting to your liking add onion, cook a minute, add corn chopped off the cob, canned works, just a few spoons, add tomatoes, add some pepper, maybe something green, like if there's a bit of bell pepper in your frige, when this is all cooked and yummy (we put a hint of chilli in ours) make your toast, while its toasting cook a couple of fried eggs, toast, tomato/bacon mix on top, and a hot egg on top of that. Very little washing up and not too much chance of setting the smoke alarm off! **** luck
Spanish Potato Omelet
* 1/2 cup olive oil
* 1/2 pound potatoes, thinly sliced
* salt and pepper to taste
* 1 large onion, thinly sliced
* 4 eggs
* salt and pepper to taste
* 2 tomatoes - peeled, seeded, and coarsely chopped
* 2 green onions, chopped
DIRECTIONS
1. In a large frying pan or skillet, heat olive oil over medium-high heat. Sprinkle potatoes lightly with salt and pepper. Cook until golden brown and crisp.
2. Once the potatoes are golden, stir in the onions. Cook, stirring occasionally, until onions soften and begin to brown.
3. Meanwhile, beat eggs together with salt and pepper. Pour eggs into pan and stir gently to combine. Reduce heat to low and cook until eggs begin to brown on the bottom.
4. Loosen bottom of omelet with a spatula, invert a large plate over the pan, and carefully turn the omelet out onto it. Slide the omelet back into the pan with the uncooked side down. Cook until eggs are set. Garnish omelet with tomato and green onion and serve warm.

HASH BROWN CASSEROLE
2 lbs. frozen shredded hash brown potatoes (thawed)
1 bunch green onions, chopped
sweet pepper chopped (red 鈥?green 鈥?yellow 鈥?orange 鈥?or a mixture of all)
1 lb. Sausage, cooked until pink disappears, crumbled
1 cup ham cubes
4 slices crisp bacon, crumbled
1 small can sliced mushrooms
1 small can sliced black olives
2 鈥?8oz. packages of shredded cheese
陆 cup milk
12 eggs beaten
Tabasco (optional)
sour cream %26amp; salsa (optional)
Grease a 9 x 13 baking pan, wipe excess with paper towel.
Spread potatoes on bottom (cand be lightly browned in a skillet first if desired)
Sprinkle sausage over potatoes鈥hen
Peppers鈥?br>
Mushrooms鈥?br>
Ham..
Onions (reserve about 录 cup)
Mix eggs %26amp; milk together鈥︹€?I added about 2 TBLS. Tabasco鈥ore to your taste鈥?pour slowly over all.
Cover with shredded cheese鈥?then sprinkle over all
Remaining onions鈥?br>
Olives鈥?br>
Bacon鈥?br>
Cover and refrigerate overnight.
Uncover and bake at 375 degrees for 35 鈥?45 minutes鈥ntil browned and cheese is melted.
Serve with sour cream and/or salsa.
STICKY BUNS
INGREDIENTS:
1 -1 1/2 cups chopped nuts (I used walnuts)
24 frozen dinner rolls (I used Rhodes)
1 pkg. butterscotch pudding (I used sugar-free instant)
1 stick butter (melted)
1 cup brown sugar (firmly packed)
2 tbls. cinnamon
INSTRUCTIONS:
Lightly butter (wipe with paper towel) a 9'; x 13';baking pan (I
used a glass Lasagna dish)
Spread nuts evenly over bottom of pan, place rolls on top. (4
across and 6 the long ways)
Sprinkle the `dry' pudding mix over rolls %26amp; nuts.
Combine the melted butter, brown sugar %26amp; cinnamon and drizzle
over buns.
Place waxed paper (that has been lightly sprayed with cooking
spray %26amp; excess wiped away with paper towel) over top. Let rise
overnight.
Bake at 350 degrees for 30 minutes, until browned.
(Second time I made these, I doubled sugar, butter, %26amp; cinnamon!)
If he likes almost anything do him a breakfast omelette, fry some onions, add chopped bacon and sausage, cook them all, when all cooked add about 3 beaten eggs and cook how you would an omelette. if you are not confident with turning the omelette then cook the bottom and then put the whole pan under the grill to cook the top. he will love it. good luck
okay:) you should make a good english breakfast----they're the best kind!!! poached eggs(eggs cracked in boiled water for 3 minutes) , pan fried butter mushrooms, bacon, toast, then on the side out some chopped tamotoes, olives and cucumbers. and your done!!!! you can add some sausages too!
most easiest one... in a oven proof. small pot put soem milk, salt and black peper.... crack an egg on it.....dont mix....in the oven baking tray put some water and bake the pot for 15/20 min at a moderate hit.... toast some bread....fruits or fruite juice and cofee.... thats it...

4. make a sandwhich out of it add a bit of salt and pepper.
