What are some good BREAKFAST recipes using sourdough breaD?

I would make sourdough French toast. I would cut the slices thicker than a normal slice of bread and saturate the bread with egg mixture. I am now getting hungry.What are some good BREAKFAST recipes using sourdough breaD?
1)Slice and toast it then top with cheese whiz. Yummy! Or, 2)make a breakfast Fritatta- in a pie dish put a layer of cubed sourdough bread. Top with shredded cheese of choice, add some diced ham or bacon, diced seeded tomatoes and some sliced scallions, greens and all. In a bowl scramble about 4 raw eggs with about 1/4 cup milk and a pinch of salt and pepper. Pour it over the bread and cheese mixture and bake it in the oven at 325 until the center is cooked. Very good. kind of like a mix between quiche and omelet!. Or 3) Make an eastern European style french toast by mixing i egg into aa cup of cold mild seasoned with some sugar and a pinch of vanilla and Cinnamon. Soak the bread then pan saute in a buttered skillet until golden on both sides. Much lighter in flavor and density then regular french toast. Or...make seasoned croutons by dicing, tossing with a bit of melted butter and olive oil seasoned with parm cheese. Toast in the oven at 375 until golden. French Toast with sourdough bread is great.





Combine whole eggs and evaporated milk ( the amounts vary depending on how many pieces of toast you are making)


I use 2 eggs for 1 cup milk


Dip bread slices in egg/milk mixture


Melt butter (2-3 T) in skillet until hot


Fry bread ( 2 pieces at a time) in skillet until light brown and crispy


Sprinkle toast with cinnamon and powdered sugar or lemon juice and powdered sugar
eggs in a nest. cut or pull out a round ';hole'; in the middle of a piece of buttered bread. place bread in a skillet on medium heat. put a pat of butter in the hole and crack an egg into the hole. cook on medium-low heat.till egg is set being careful not to burn bread.
Egg McMuffin! Toast the bread and put some mayonnaise on it. Then melt some cheese on top of a fried egg, and put ham on top. Put all that between the two pieces of sourdough, and voila! Add bacon if you like. :)
I would just toast it and drizzle olive oil on it.
