Easy Cinnamon Biscuits

1/4 cup sugar

1/4 cup chopped pecans

1/2 teaspoon cinnamon

2 cups biscuit mix (Bisquick, etc.)

1/2 cup cold water

3 tablespoons butter or margarine, melted

In a small bowl mix sugar, pecans and cinnamon and set aside. Prepare mix according to package directions, using the cold water for liquid. Shape mixture into a ball and place on a sheet of lightly floured waxed paper. Press down slightly, then cut in 12 equal wedges. Shape each in ball, roll in melted butter, then in cinnamon, sugar, and pecan mixture. Arrange dough balls in 8-inch round layer-cake pan, pressing down slightly. Fancy Fluffy Omlet

8-inch teflon skillet %26amp; lid

soft spatula

1 tsp olive oil

salt

pepper

chopped tomato

chopped onion

shredded cheese

sliced deli ham

diced green peppers

mild salsa

olives

3 large eggs - beaten

1 Tablespoon water or milk

Each omelet takes about 4 minutes to cook and serve. Generous ingredients makes taller and more impressive omelets.

Thoroughly heat the olive oil in pan on medium. Pour beaten eggs into pan and stir with the corner of the spatula in a quick circular motion to keep the edges turned back into the body of the egg until very lumpy and almost half-cooked.

Sprinkle small amount of salt and pepper, cover with lid for 40 seconds (egg will rise and fluff under lid (amazing!).

Holding pan's handle with your left hand, slip spatula gently under egg (take care not to tear) to loosen and lift egg from pan. Help it up by snapping pan upwards and flip egg over in one easy motion. Catch the egg in the pan with wet side down.

Add any or all ingredients to the cooked side of the egg especially ham, cheese and salsa. Fill one half of the egg and fold opposite side over the ingredients until edges of the egg touch - closing the omelet.

Cover and cook 30 more seconds. Serve steaming with cheese melting everything together inside the new fancy fluffy omelet!

The trick is covering the omelet during cooking to fluff the egg, then perfecting your technique flipping the egg over without painting the kitchen. It takes a little practice but the easier you flip the better it goes. Keep the pan close to the egg as you maneuver. Keep ingredients close and beat extra eggs for more servings.

Cinnamon Butter Toast

Cinnamon-Sugar

Butter

2 slices of bread

Warm up a skillet on med-high. When the skillet is hot, melt some butter on it. Brown the bread on both sides. Cover both sides of the bread with the cinnamon sugar (1 1/2 tsp sugar:1/2 tsp cinnamon-make as much as needed).

Melt some more butter on the skillet, and warm both sides of the now cinnamon-sugar-covered bread till the cinnamon sugar is melted- DON';T BURN!!! Do the same with the other peice of bread.

*Make sure you don't use your bare hands to flip the bread while its on the skillet, it could burn your hands
