Any good tailgaitin football recipes for breakfast?

i know lunch and dinner. i got that covered.





but what about some kind of great egg breakfast on the barbecue?Any good tailgaitin football recipes for breakfast?
I'm not supportive of eggs for the barbecue but the pit boys of Texas have some ways to make eggs benedict. I highly recommend beef brisket and Southern Style breakfasts for these events.Any good tailgaitin football recipes for breakfast?

ham, eggs, sausage, hash browns, cheese and bacon. And mushrooms and cut up peppers, too.





Basically it's an omelet served in a wrap.





Cook'em, wrap'em in a flour tortilla and wrap the burrito up about 1/2 way with aluminum foil and there you go.





You can have refried beans with this and the diners can customize their burritos if they want (3 or 4 speed burritos, etc) Have hot sauce and catsup available.





Wash it down with individual bottles of juice. Or make a big container of oj and don't forget the coffee.
sausage gravy: cook sausage in a skillet, add milk and flour, salt and pepper. Have a ton of biscuits to serve it with





Some kinda giant egg scramble up is always good hearty: usually like doin this..eggs (from a dozen to a 100 haha) couple a onions, sausage or bacon or ham..or all three or any combo of the 2, some sliced up potatoes, any kinda cheese(s) you want, maybe add some salsa or tabsco or your favorite bbq sauce...maybe add in peppers or n whatnot...this is great cuz its a kitchen sink kinda thing








my alltime favorite though: corned beef hash from scratch...tons of over easy or fried eggs...hash browns....nothin beats that for me





gimme that wit some sausage gravy...if you really wanna go for it maybe some chicken fried steak...im sure theres some cookbooks out there too man

    Hawaiian Sandwiches --








    .INGREDIENTS


    16 slices bacon


    8 slices toasted white bread


    1 (20 ounce) can sliced pineapple, drained


    8 slices Cheddar cheese

    1.Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and set aside.





    2.Place 8 slices of toast on a baking sheet. Place a slice of pineapple, two slices of bacon and a slice of cheese on each. Broil until cheese is melted. Serve hot.

    Toasted Strawberry-Cream Cheese Breakfast Sandwiches --








    .INGREDIENTS


    2 1/2 cups fresh strawberries, cleaned, hulled and sliced


    3/4 cup pink sparkling wine


    1 (8 ounce) package cream cheese, softened


    3/4 cup finely chopped white chocolate


    2 teaspoons finely grated orange zest


    2 tablespoons fresh orange juice


    8 slices cinnamon raisin bread


    2 tablespoons butter


    1/2 cup maple syrup








    ..DIRECTIONS


    1.Place the strawberries in a bowl with the sparkling wine and let marinate at least 20 minutes. Drain the strawberries, reserving the sparkling wine. Set aside 1/2 cup of strawberries for a garnish.





    2.Meanwhile, combine the cream cheese, white chocolate, orange zest, and orange juice in a separate bowl; stir and blend until smooth.





    3.Spread 4 slices of raisin bread with the cream cheese mixture. Arrange the drained strawberries over the cream cheese. Top with remaining 4 slices of raisin bread to make a sandwich.





    4.Melt the butter in a large skillet over medium heat. Place the sandwiches in the skillet; cook until lightly toasted on each side, about 2 minutes per side.

    Make some toast, add sliced cheese and put in the oven under the pre heated grill until the cheese is bubbly.

    I'm a Chinese and I used to have milk, yoghurt, toast + butter for breakfast. Now I have to change quite dramatically from western diet back to traditional Chinese one!





    To have congee, rice noodle to start my day and stay away from ice-cream and any sweet / desserts! It's going to kill me!

    I'm gluten intolerant, but for me congee and so on for breakfast is just right! I'm not Chinese, but I love to eat Asian and Oriental food. I quite often have congee for breakfast.





    I don't know if you agree, but I find rice is much more appetising if you put quite a lot of chilli with it. I also like the fine rice noodles used for Singapore noodles in Chinese restaurants. They are quite different tasting to rice.





    Otherwise, if you don't like porridge (it's nice in Winter), you could use the oats instead to make a sort of muesli type breakfast with raisins and chopped nuts. You could mix it with rice milk or fruit juice and slice an apple or banana into it.





    The only other thing I can think of is to start the day with a good mixed fruit salad. You would need to have a banana in there somewhere, I think, to help you feel that you have eaten enough.

    you can eat noodle.... can be fried, boiled or soup
    ok havering experience in no dairy products Porridge: porridge oats are good and especially filling as long as they are cooked in water and not milk. Drizzle with a little honey or brown sugar instead of cream and stir in some dried fruit like apricots, sultanas or dates. Rice milk is wonderful we live off it

    I make what they call monkey toes.Easy.Take some can biscuits(cheap) and cut them in 4's.Take butter and coat your pan (generous).Sprinkle some pecans(crushed)over the butter.Now sprinkle with brown sugar over them.Then take the biscuits and roll them litely in sugar and place them in the pan.Don't press them down, just fill the pan.Over lapping is OK.Then bake at 400 for about 20 mins.Brown and bubbly.Then once you remove from oven have a plate to turn them out on.Good with coffee,milk,or juice.Breakfast Bread Recipes?

    INGREDIENTS


    1 cup blueberries, rinsed and drained


    2 teaspoons all-purpose flour


    1/3 cup butter, softened


    1 cup white sugar


    2 eggs


    2 teaspoons grated lemon zest


    1 1/2 cups all-purpose flour


    1 teaspoon baking powder


    1 pinch salt


    1/2 cup milk


    DIRECTIONS


    Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.


    Dredge the blueberries in 2 teaspoons flour; set aside. In a large bowl, cream together butter and sugar until light and fluffy. Stir in eggs one at a time, beating well with each addition. Mix in the lemon zest. In a separate bowl combine flour, baking powder and salt.


    Stir the flour mixture into the egg mixture alternately with the milk. Fold in the blueberries. Pour batter into prepared loaf pan.


    Bake in preheated oven for 50 to 60 minutes, until a toothpick inserted into center of the loaf comes out clean. Allow bread to cool for 10 minutes before removing from pan.
    Apple Breakfast Bread


    INGREDIENTS


    1/2 cup butter


    1 cup sugar


    2 eggs


    2 cups all-purpose flour


    1 teaspoon baking soda


    1/2 teaspoon salt


    1 teaspoon ground cinnamon


    1/2 teaspoon ground cloves


    2 apples - peeled, cored and chopped


    DIRECTIONS


    Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x4 inch loaf pan.


    In a bowl, mix the butter and sugar until smooth and creamy. Beat in the eggs.


    In a separate bowl, sift together the flour, baking soda, salt, cinnamon, and cloves. Mix into the butter mixture until moistened. Fold in the apples. Transfer to the prepared loaf pan.


    Bake 1 hour in the preheated oven, until a toothpick inserted in the center comes out clean. Cool in the pan for 15 minutes before removing to a wire rack to cool completely











    Breakfast Sausage Bread


    INGREDIENTS


    2 (1 pound) loaves frozen white bread dough, thawed


    1/2 pound mild pork sausage


    1/2 pound hot pork sausage


    1 1/2 cups diced fresh mushrooms


    1/2 cup chopped onion


    3 eggs


    2 1/2 cups shredded mozzarella cheese


    1 teaspoon dried basil


    1 teaspoon dried parsley flakes


    1 teaspoon dried rosemary, crushed


    1 teaspoon garlic powder


    DIRECTIONS


    Allow dough to rise until nearly doubled.


    Meanwhile, in a skillet over medium heat, cook and crumble sausage. Add mushrooms and onion. Cook and stir until the sausage is browned and vegetables are tender; drain. Cool. Beat 1 egg, set aside. To sausage mixture, add 2 eggs, cheese and seasonings; mix well. Roll each loaf of dough into a 16-in. x 12-in. rectangle. Spread half the sausage mixture on each loaf to within 1 in. of edges. Roll up jelly-roll style, starting at a narrow end; seal edges. Place on a greased baking sheet. Bake at 350 degrees F for 25 minutes; brush with beaten egg. Bake 5-10 minutes more or until golden brown. Serve warm.
    Banana Bread with Pecans Recipe





    2 cups all-purpose flour


    1 1/2 teaspoons baking soda


    1/2 teaspoon salt


    4 overripe bananas


    1 cup sugar


    3/4 cup (1 1/2 sticks) unsalted butter, melted and cooled


    2 large eggs


    1 teaspoon pure vanilla extract


    1/2 cup pecans, finely chopped


    Confectioners' sugar, for dusting








    Preheat oven to 350 degrees F and lightly grease a 9 by 5-inch loaf pan.


    In a large bowl, combine the flour, baking soda, and salt; set aside.





    Mash 2 of the bananas with a fork in a small bowl so they still have a bit of texture. With an electric mixer fitted with a wire whisk, whip the remaining bananas and sugar together for a good 3 minutes; you want a light and fluffy banana cream. Add the melted butter, eggs, and vanilla; beat well and scrape down the sides of the bowl. Mix in the dry ingredients just until incorporated; no need to overly blend. Fold in the nuts and the mashed bananas with a rubber spatula. Pour the batter into the prepared loaf pan. Give the pan a good rap on the counter to get any air bubbles out.





    Bake for about 1 hour and 15 minutes, until golden brown and a toothpick inserted into the center of the loaf comes out clean. Don't get nervous if the banana bread develops a crack down the center of the loaf; that's no mistake, it's typical. Rotate the pan periodically to ensure even browning.





    Cool the bread in the pan for 10 minutes or so, and then turn out onto a wire rack to cool completely before slicing. Toast the slices of banana bread, dust with confectioners' sugar, and serve.

    Ingredients:





    * 3 cups all-purpose flour


    * 1 tablespoon plus 2 teaspoons pumpkin pie spice


    * 2 teaspoons baking soda


    * 1 1/2 teaspoons salt


    * 3 cups granulated sugar


    * 1 can (15 ounces) LIBBY'S庐 100% Pure Pumpkin


    * 4 large eggs


    * 1 cup vegetable oil


    * 1/2 cup orange juice or water


    * 1 cup sweetened dried, fresh or frozen cranberriesDirections:


    PREHEAT oven to 350掳 F. Grease and flour two 9 x 5-inch loaf pans.





    COMBINE flour, pumpkin pie spice, baking soda and salt in large bowl. Combine sugar, pumpkin, eggs, oil and juice in large mixer bowl; beat until just blended. Add pumpkin mixture to flour mixture; stir just until moistened. Fold in cranberries. Spoon batter into prepared loaf pans.





    BAKE for 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pans on wire racks for 10 minutes; remove to wire racks to cool completely.

    PREPARE as above. Bake for 55 to 60 minutes.





    FOR FIVE OR SIX 5 x 3-INCH MINI-LOAF PANS:

    This is my new favorite recipe. It's like a crustless quiche!





    Spinach-Cheese Bake





    1 tablespoon butter, melted


    Cooking spray


    2 (6-ounce) packages fresh baby spinach


    1 1/4 cups (5 ounces) shredded reduced-fat sharp cheddar cheese


    3/4 cup (3 ounces) shredded Monterey Jack cheese


    1 1/3 cups all-purpose flour (about 5 3/4 ounces)


    1 1/2 cups fat-free milk


    1 cup egg substitute


    1 teaspoon salt


    1 teaspoon baking powder


    2 teaspoons Dijon mustard


    1/4 teaspoon freshly ground black pepper


    1/8 teaspoon ground nutmeg


    1/8 teaspoon ground red pepper





    Preheat oven to 350掳.


    Pour the butter into the bottom of a 13 x 9-inch baking dish coated with cooking spray; tilt dish to coat. Place spinach evenly in bottom of dish; sprinkle evenly with cheeses.





    Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and remaining ingredients in a medium bowl; stir with a whisk until blended. Pour milk mixture over cheese. Bake at 350掳 for 40 minutes or until lightly browned. Serve immediately.








    Breakfast Bread





    1 lb. Hot sausage


    3/4 c. Bisquick baking mix


    1 1/4 c. milk


    3 eggs


    Shredded Cheese





    Heat oven to 400 degrees. Grease square baking dish 8x8x2 inch.


    Cook and stir sausage in a skillet until brown; drain. Spoon into baking dish.


    Beat Bisquick, milk and eggs with a wire whisk. Pour into dish. Sprinkle desired amount of cheese on top

    My kids love fajita frittatas, and they are picky, so I know it's good (can't eat eggs, or I'd tell you myself!)





    You need a cast iron skillet or any large skillet that will transfer to the oven (make sure the handle won't burn up, etc.) You can modify the recipe to suit your tastes, but the method is the same. This is basically a quiche without a fussy crust.





    12 eggs


    1 onion, diced


    2 bell peppers, diced


    1 can diced tomatoes, drained


    2 cups cheese - whatever kind you like. We use pepper jack to spice things up, but you can use cheddar, etc.


    2 cups chicken, diced - optional. Veggie lovers is just as good!





    Preheat oven to 350 and spray your pan with cooking spray. Start on the stove top over medium-high heat.





    Break all eggs into a bowl and beat lightly. NOTE: You can easily half this recipe and use a smaller skillet! Add 1/2 the cheese, the onion, the bell pepper, the tomatoes and the chicken and stir to combine.





    Pour into skillet and stir around a bit like you would scrambled eggs. When the mixture begins to set up, stop stirring. Continue to cook on the stove top for 2-3 more minutes, until the frittata starts to set. Sprinkle with remaining cheese.





    Move the entire skillet into the oven for about 10 minutes. Check for doneness by inserting toothpick. Remove and let cool for at least 5 minutes.





    If you sprayed the skillet, and especially if you used cast iron, you should be able to slide the frittata right out onto a serving platter.





    Serve with salsa and sour cream and enjoy!
    Jazz up your scrambled eggs by whisking in some black caviar or shredded smoked salmon before cooking, simple but delicious.

    Apple Baked Lasagna





    (6 servings)


    1 cup sour cream


    1/3 cup brown sugar


    12 slices bread


    1/2 pound ham


    2 cups shredded cheese (any variety)


    1 can apple pie filling


    1 cup granola with raisins


    In small bowl, combine sour cream and brown sugar; chill. Place 6 slices of bread in the bottom of a greased 13x9 baking pan. Layer ham, 1 C cheese, and remaining 6 slices of bread. Spread apple filling over top, sprinkle with granola. Bake in 350 degree oven 25 minutes. Top with remaining cheese and bake 5 minutes or until cheese is melted. Serve with sour cream mixture.
    Unique Turkey Burgers





    Ingredients:





    Burgers


    1 1/2 lbs ground turkey


    2/3 cup plain breadcrumbs (panko also works)


    1 egg, slightly beaten


    1 green onion, chopped fine


    1 clove garlic, miced fine


    1/2 cup zucchini, shredded fine


    1 tablespoon fresh sage, chopped


    1 teaspoon salt


    1/2 teaspoon cracked black pepper





    Glaze


    1/3 cup honey


    1 tablespoon balsamic vinegar


    1 teaspoon soy sauce


    1 clove garlic, miced fine





    Burger toppings


    1/2 cup cranberry sauce


    1 cup alfalfa sprouts


    3 tablespoons sunflower seeds (without the shells)


    6 whole whole wheat hamburger buns





    Steps:


    1. Mix all of the burger ingredients together and form 6 patties;set aside.





    2. Mix all of the glaze ingredients together.





    3. Place burgers on hot grill.





    4. Cook for 5 minutes on each side, brushing with the glaze every few minutes.





    5. Remove burgers from the grill.





    6. Smear a bit of cranberry sauce on each of the 6 buns.





    7. Top bun with a burger.





    8. Top burger with alfalfa sprouts.





    9. Top sprouts with a sprinkling of sunflower seeds.





    10. Put top bun on bottom bun and eat.

    This is not a recipy for one person, but here you are. It is not difficult to make, tastes fresh and healthy and is still filling enough :





    - Pine apple / orange / apple / banana - salad mixed with lemon juice, sugar and a bit of cream.


    - Bagles with fresh baked fish sticks, sprinkles some lime juice over it and squeez some fresh salad leaves in between


    - One boiled egg for everybody (to be salted / peppered)


    - A large cup of coffee or tea.
    I love this for breakfast.





    Eggs - 8


    Jalapeno peppers - 2 (chopped and seeded)


    Green bell pepper - 1/3 cup (chopped)


    Tomatoes - 2 (seeded and chopped)


    Low fat cheddar cheese - 6 slices


    Large flour tortillas - 6


    Salt and pepper - add to taste


    Hot pepper sauce - a dash


    Low fat butter - 1 tbsp


    Cilantro





    Beat the eggs well, and add hot pepper sauce, jalapenos salt, and pepper.


    Melt butter in a pan on medium-high heat. Then pour in egg mixture, and cook until the eggs solidify.


    Place a slice of cheese on each tortilla. Top with egg mixture, tomatoes, and cilantro.


    Roll the tortilla and tuck the ends under. Bake for 10 minutes at 350.
    Eggs Goldenrod





    2 eggs per person, hard-boiled


    One packet of Pioneer biscuit gravy (any brand will do)


    Two pieces of toast per person





    1. While you have your bread toasting and your gravy boiling, peel your hard-boiled eggs, and separate the whites from the yolks. Set yolks aside.


    2. Chunk the hard-boiled whites of the egg, and mix with the prepared gravy. Salt and pepper to taste.


    3. Pour the gravy and egg white mixture onto toast.


    4. Finely grate the hard-boiled egg yolks on top of the toast and gravy mixture

    8-oz carton frozen strawberries, partially thawed


    1 small can frozen orange juice


    1 medium banana, sliced


    1 c whole milk


    6-8 ice cubes


    2 teaspoons sugar





    Combine all ingredients in a blender and process until smooth.





    For extra zip, omit the strawberries and replace with 1/4 cup peanut butter. It's wonderful!Breakfast shake recipes?

    * 4 whole strawberries





    Directions:


    In a blender, combine the first five ingredients; cover and process mixture until smooth and thickened. Pour into chilled glasses. Garnish with whole strawberries. Serve immediately. Yield: 4 servings.
    Banana Breakfast Shake





    Ingredients


    1 1/2 cups skim milk


    1 medium banana, peeled sliced and frozen


    1/2 teaspoon vanilla extract


    1/4 teaspoon almond extract


    Directions


    1In a blender, combine milk, banana, vanilla and almond extract.


    2Blend until smooth, about 20 seconds.


    3Pour into glasses and garnish with a sprinkle of ground cinnamon, if desired.


    4*Wrapsliced banana in plastic wrap or place in a freezer storage bag.


    5Freeze several hours or overnight.
    1 package of silken tofu


    1 cup of silk chocolate soy milk


    1 frozen banana








    place all in the blender and blend until smooth. It is really good and trust me you will NEVER ever know it is tofu. It's got a lot of protein in it and will keep you feeling full.

    1. bake recipe creation according to directions on package. Do the same with the gravy.





    2. spread the gravy on the finshed crust like you would a pizza sauce





    3. spread the scrambeled eggs on top of the gravy





    4. sprinkle the crumbeled bacon over the eggs

You can make sandwiches ahead and keep in the freezer, just stay away from ingredients that do not freeze well like mayo, and lettuce and tomato, add those after thawing. Next, you can make rice bowls with vegies, rice and your favorite protein. Just freeze them in a freezer safe container and microwave when you want them. For dinner, casseroles can be made and frozen in individual portions. There are a couple of books on freeze ahead meals.     In medium saucepan, cook minced onion in butter until softened and translucent. Add condensed soup and water and cook until it is hot.


    Add 2/3 of the cheese and blend well until it is melted, stirring constantly to keep the cheese from burning and sticking on the bottom of the pan.


    Blend rice, broccoli, and remaining cheese in a 13'; x 9'; baking pan. Pour the soup cheese mixture over it.


    Add salt and pepper to taste.


    Bake for 45 minutes until it is bubbly and golden in color.

    Good to feed a breakfast crowd,


    or to refrigerate for a week’s worth of quick morning meals





    2 containers of crescent rolls


    1 dozen large or extra large eggs


    1 pound ground Italian sausage, mild or hot


    3 ounces cream cheese


    2 cups of sharp cheddar cheese, grated


    1/4 cup milk


    salt and pepper to taste


    Tobasco


    Tony Chachere’s seasoning, if you can find it








    Preheat oven to 375 degrees.


    Brown the sausage in a pan and drain excess grease once it’s cooked.


    Return the sausage to the warm pan and mix in the cream cheese.


    Grease an 8×10 baking pan.


    Unroll the crescent rolls until they lie flat and line the baking pan with the dough.


    Press the edges together and bring the dough slightly up the sides of the pan.


    Save some strips for the top.





    In a mixing bowl, whisk together the eggs, salt, pepper, Tobasco, and Tony’s.


    Any seasoning is great here, have fun with it.





    Pour the sausage and cream cheese mixture over the dough in the baking pan, spreading evenly.


    Sprinkle the cheddar cheese over the sausage mixture.


    Pour the eggs over the sausage and cheese evenly.


    Place the remaining strips of dough over the eggs.


    Bake, uncovered, for approximately 30 minutes.





    Remove from oven, cover with foil, and bake for another 15-20 minutes, until a knife pulled through the casserole doesn’t show any egg running.





    Cut into squares and serve warm.





    This is also great with ham and other vegetables, like bell peppers. Salsa mixed into the eggs is a great addition.

    This hearty Italian open-faced omelet can be served hot or warm.





    Ingredients:





    10 large eggs


    3 tablespoons half-and-half


    Table salt and ground black pepper


    1/2 cup crumbled goat cheese


    1 (6-ounce) bag baby spinach


    3/4 pound Yukon Gold potatoes , peeled and cut into 1/2-inch pieces


    6 slices bacon , cut crosswise into 1/4-inch strips





    Preparation:





    Adjust oven rack about 5 inches from heating element and set oven to broil. Whisk eggs, half-and-half, 1/4 teaspoon salt, and 1/4 teaspoon pepper together in bowl until combined. Stir in 1/4 cup cheese.





    Microwave spinach in large microwave-safe bowl, covered with plastic wrap, on high power until wilted, about 90 seconds. Transfer spinach to clean dish towel and squeeze out excess liquid. Microwave potatoes in now-empty bowl, covered with plastic wrap, on high power until tender, about 5 minutes.





    Meanwhile, fry bacon in medium nonstick ovensafe skillet over medium heat until crisp, about 6 minutes. Transfer bacon to plate lined with paper towel and pour off all but 1 tablespoon fat from skillet. Add potatoes to skillet and cook until golden brown, about 5 minutes. Add spinach, bacon, and egg mixture and cook, using rubber spatula to stir and scrape bottom of skillet, until large curds form but eggs are still very wet, about 2 minutes. Shake skillet to distribute eggs evenly and cook, without stirring, until bottom is set, about 30 seconds. Sprinkle remaining cheese over top.

    Ingredients:





    1 bunch green onions – diced


    5-6 pieces pork sausage %26amp; 2-3 small pieces ham or Canadian bacon


    1 14-ounce can stewed tomatoes (with onions, peppers, %26amp; celery)


    1 small can mushrooms (optional)


    5 large eggs


    2 tablespoon milk


    2/3 cup Bisquik


    1 teaspoon oregano


    2 cups Colby/Monterey Jack Cheese





    Preparation:





    Preheat oven to 350°F. Prepare 9” quiche dish or pie plate by spraying with non-stick cooking spray. Layer onions, meat, tomatoes %26amp; mushrooms. Mix eggs, milk, bisquik, oregano, %26amp; pour over layered mixture. Top with Colby/Monterey Jack Cheese. Bake for about 45 min. at 350°F. Serve with salsa, fruit plate, muffins, orange juice %26amp; coffee.





    Note: I prepare the first 4 ingredients the night before %26amp; refrigerate. Then add remaining ingredients %26amp; bake the next morning.

    Ingredients:





    8 eggs


    1/3 cup flour


    1 tsp baking powder


    2 cup cottage cheese


    3/4 lb pepper jack cheese (small cubes)


    1/2 lb cheddar cheese (small cubes)


    1/2 cup sauteed onions


    1/4 cup diced ortega chilies


    1/4 cup scallions


    1/4 cup sauteed bell peppers


    2 Tbsp Pimentos


    1 tsp dried cilantro


    1/3 cup melted butter





    Topping:





    1 cup chunky salsa


    1 cup sour cream


    1 cup guacamole


    fresh cilantro (or parsley)





    1/2 cup melted butter for coating and ramekin and sauteing


    12 generously buttered 3'; ramekins (pam just won't do)





    Preparation:





    Whisk eggs until frothy. Add flour and baking powder and whisk until smooth and creamy. Add cottage cheese and mix. Add remaining ingredients, saving melted butter for last. Spoon fill each ramekin to just below the rim. Place in baking pan and fill pan with 1'; water. Bake in preheated 400 degree oven for 15 minutes. Lower oven to 350 degrees and continue baking for 30 more minutes or until eggs puff up like domed souffles.





    Immediately after removal from oven, loosen edges with small knife to prevent ';center drop';. Using hot pad or small damp towel to hold ramekin, loosen all around and turn egg out into hand, reversing on to serving platter or individual plate. Top with salsa, a dollop of sour cream, guacamole, and chopped cilantro or parsley. Yield: 10 servings

    4 cups cubed day-old bread


    3 cups shredded Cheddar cheese

    1/2 teaspoon pepper

    1.In a large skillet, saute the mushrooms, zucchini, ham, onions, green peppers and garlic in oil until vegetables are tender. Drain and pat dry; set aside.

    Easy Hashbrown Quiche





    Ingredients


    3 cups hash browns, shredded


    1/2 teaspoon garlic powder


    1/4 teaspoon salt


    1 cup butter, melted


    1/2 cup monterey jack pepper cheese, shredded


    1/2 cup swiss or cheddar cheese, shredded


    1 cup ham, cooked, diced


    1/2 cup green onion, Chopped


    2 eggs


    1/2 cup whipping cream


    1 teaspoon salt


    1 teaspoon pepper





    Directions





    Press hash browns between paper towels to remove moisture.


    Add seasoning to hash browns. Grease a 9 inch pie plate with 2 tbsp butter. Press hash browns onto the bottom and up the sides of the dish. Drizzle with remaining butter.





    Bake uncovered at 425掳F for 20 to 25 minutes or until edges are brown. Remove from oven. Reduce heat to 350





    Combine cheese and ham; spoon into crust.


    Beat eggs with cream and seasoning pour over ham and cheese.





    Reduce heat to 350掳F and bake uncovered for 20 to 25 minutes or until knife inserted comes out clean.


    Let stand for 10 minutes before cutting.
    My fave is corned beef hash, but NOT from a can.





    Buy a corned beef brisket and cook it according to package directions except a little longer, you want the corned beef to be pull apart tender.





    Mean while microwave about 2-3 potatoes until soft but still a little firm-not crispy. And put them in the fridge.





    The corned beef should be done by late-ish tonight. Pull the corned beef out of the water, or baking dish. Start to shred the corned beef, include the majority of ahte fat in the pulled beef, and put it in a bowl. Peel the potatoes and dice them real small. Mix well with the beef, and put in small zipper seal baggies. Save one for tomorrow (at least one-I'm not sure how many people you are serving. A one quart baggie will feed 2-3 people)





    Tomorrow morning heat it up in a skillet and serve with eggs (Ilike over easy), hash browns-frozen or homemade-or Cowbpy style, and toast.

    6 slices Jones Dairy Farm Canadian Bacon


    10 ounce baby spinach or torn spinach leaves


    2 ounce Neufchatel (light) cream cheese, cut into cubes


    1/4 Teaspoon salt, divided


    1/8 Teaspoon pepper


    1 Teaspoon cornstarch


    3/4 Cup chopped seeded plum tomatoes


    6 eggs


    1/3 Cup finely shredded Asiago or Parmesan cheese








    Directions:


    Heat a large deep skillet over medium-high heat until hot. Add Canadian bacon; cook until golden brown, 2 to 3 minutes per side. (This increases flavor and seals in the juices.) Remove from skillet and set aside. Add spinach in batches to same skillet. Cook, turning with tongs until spinach is wilted. Add cream cheese, 1/8 teaspoon of the salt and pepper to spinach. Cook, stirring constantly, until cream cheese melts and liquid from spinach evaporates. Combine cornstarch and 1 tablespoon cold water. Add to spinach mixture and cook until thickened, 2 to 3 minutes. Remove from heat; stir in tomatoes. Arrange Canadian bacon over spinach mixture and top each with a raw egg. Sprinkle eggs with remaining 1/8 teaspoon salt and cheese. If skillet is not oven proof, wrap handle in foil. Transfer skillet to a preheated 375掳F oven; bake 20 minutes or until egg whites are set and yolks are soft. VARIATION: To bake individual servings, transfer spinach mixture to 6 large custard cups or ramekins. Top with Canadian bacon, eggs and cheese. Place cups on a baking sheet and bake as recipe directs.

In 2 tablespoons of the bacon drippings, saute onion over low heat until tender. Remove from heat. In a mixing bowl, combine egg yolks, Tabasco, paprika, flour, and milk; beat until smooth. Add the shredded Swiss cheese. In another bowl, beat egg whites with the salt until stiff but not dry; fold into cheese mixture. Heat the same skillet with onion over medium-low heat. If an electric skillet is used, 250掳. Pour egg mixture over onion; cover and cook for 12 to 15 minutes, or until almost set. Top with Cheddar cheese and the crumbled bacon. Cover and cook for 5 minutes longer, or until omelet is set and cheese is melted. Sprinkle with chopped parsley or chives, if desired.

    Apple-Cinnamon Oat Pancakes





    1/2 cup whole wheat flour


    1/2 cup quick-cooking or old fashioned oats


    1 tablespoon granulated sugar


    1 teaspoon baking powder


    1/2 teaspoon ground cinnamon


    1/2 teaspoon salt


    1 large egg


    2/3 cup milk


    1/2 cup applesauce


    2 tablespoon vegetable oil


    1/2 cup finely chopped walnuts


    Stir together flour, oats, sugar, baking powder, cinnamon, and salt in mixing bowl.


    Beat egg in separate bowl; stir in milk, applesauce, and oil.


    Add liquid mixture to dry ingredients, stirring just until blended. Fold in walnuts.


    Heat greased griddle or skillet over medium heat or to 375*F (190*C). Griddle is ready when a few drops of water bubble and skitter rapidly around.


    For each pancake, pour scant 1/4 cup batter onto hot griddle. Cook pancakes until puffed, bubbly and dry around edges. Turn and cook other sides until golden brown.


    Makes about 10 (4-inch) pancakes.








    INGREDIENTS:


    3 cups sifted all-purpose flour


    1 tablespoon plus 1 teaspoon baking powder


    1/2 teaspoon salt


    1/2 cup butter


    1 cup milk


    1 cup orange marmalade


    1/2 cup chopped raisins


    1/2 cup finely chopped pecans


    PREPARATION:


    Into a medium bowl, sift together the flour, baking powder, and salt. Cut in butter with a pastry blender or knives until mixture is fine, even crumb. Add milk and stir just until dry ingredients are moistened. Turn dough out onto a lightly floured surface and knead about 10 times, until a smooth ball is formed. Roll out dough to a rectangle about 10x16 inches. In a small bowl, combine orange marmalade, raisins, and pecans. Spread evenly over the dough; roll up as for a jelly roll, starting at long edge. Cut roll into 10 slices. Place slices, cut side down, in a generously buttered 9-inch round layer cake pan. Bake at 400掳 for 30 to 35 minutes, or until lightly browned. Serve warm.


    Makes 10 orange marmalade buns.








    Tomato Bagel Sandwich





    1 bagel -- split and toasted


    2 tablespoons cream cheese


    1 tomato -- thinly sliced


    salt and pepper to taste


    3 fresh basil leaves

    Cranberry-Orange Nut Bread





    1 3/4 cups flour


    3/4 c. sugar


    1 1/2 tsp. baking powder


    3/4 tsp. salt


    1/2 tsp. baking soda


    1/4 c. butter, softened


    1 tbsp. grated orange peel


    1 egg


    1 c. cranberries, chopped


    1/2 c. chopped nuts (I prefer almonds with this recipe)








    Heat oven to 350掳F.





    Grease bottom of loaf pan, 9 x 5 x 3 inches. Mix flour, sugar, baking powder, salt and baking soda. Stir in butter until mixture is crumbly. Stir in orange peel, juice and egg just until all flour is moistened. Stir in cranberries and nuts. Spread in pan.





    Bake until wooden pick inserted in center comes out clean, 55 to 65 minutes. Loosen edges of loaf with spatula; remove from pan. Let stand at least 8 hours before slicing.





    If using self-rising flour, omit baking powder and salt. Reduce baking soda to 1/4 teaspoon.
    GINGERBREAD WAFFLES





    WAFFLES:





    2 1/4 c. flour


    2 tsp. ginger, ground


    1 1/4 tsp. baking soda


    1 egg, separated


    1 c. light molasses


    1/2 c. skim milk


    1/3 c. butter, melted


    Salt





    Combine flour, ginger, baking soda and salt. Beat egg yolk and add molasses, milk, melted butter; mix well. Beat egg white until stiff peaks form. Fold into batter. Bake in preheated waffle iron. Serve with ice cream. Makes 6 to 8 waffles.

    1/2 cup whole wheat flour


    1/2 cup all purpose flour


    2 teaspoons baking powder

    1 1/2 cups milk


    Fresh peaches





    In a mixing bowl, sift the dry ingredients. In a separate bowl, combine all other ingredients, except peaches, using a whisk. Combine dry and wet ingredients. Let rest for 2 hours.


    Heat griddle. In the meantime, slice peaches thinly. Spoon pancake mixture onto the griddle. The sliced peaches should be added immediately. Flip once.








    Oatmeal Waffles--





    2 cups buttermilk


    1/4 cup orange juice


    2/3 cup quick-cooking rolled oats


    1 egg


    2 tablespoons packed light brown sugar


    1/2 cup all-purpose flour


    1/2 cup whole wheat flour


    1 1/2 teaspoons baking soda


    1/2 teaspoon salt


    2 tablespoons melted butter, plus more for cooking


    Allspiced Apple Butter, recipe follows


    Whipped cream, for garnish


    Fresh berries, for garnish, optional


    Equipment: Waffle iron








    The night before you plan to serve the waffles, in a medium bowl, combine the buttermilk, orange juice, and oats. Mix well, cover, and refrigerate overnight.


    In a large bowl, whisk the egg. Add the sugar and mix. Add the flours, baking soda, salt, and the oat mixture and mix well. Stir in the melted butter. The batter may be slightly lumpy.





    Preheat and lightly butter a waffle iron. Spoon a generous 1/2 cup of batter onto the hot iron and close the lid. Cook until no more steam escapes from the iron and the waffle is golden on both sides, about 5 minutes. Serve immediately with the apple butter and whipped cream and garnished with fresh berries.








    Banana Stuffed French Toast--





    1 firm, ripe banana


    3/4 cup half-and-half


    2 large eggs


    1 teaspoon vanilla


    1/4 teaspoon cinnamon


    1/4 teaspoon freshly grated nutmeg


    4 (1-inch thick) slices day-old challah or brioche


    2 tablespoons unsalted butter


    Confectioners' sugar for dusting





    Accompaniment: Warm maple syrup


    Cut banana into 1/4-inch thick slices. In a bowl, whisk together half-and-half, eggs, vanilla, cinnamon, and nutmeg. Cut bread slices horizontally almost in half, leaving 1 edge intact. Stuff each pocket with 4 to 6 banana slices (do not overstuff). In a baking dish just large enough to hold bread slices in one layer, arrange slices and pour custard over them. Soak slices, turning them over once or twice to allow bread to absorb all liquid, about 15 minutes.


    In a 12-inch non-stick skillet melt butter over low heat until foam subsides and cook slices until golden, about 5 minutes on each side.


    Dust French toast with confectioners' sugar and serve with syrup.








    Perfect Hash Browns--





    2 large russet potatoes


    2 tablespoons unsalted butter


    1 medium onion, finely chopped


    Kosher salt and freshly ground black pepper


    2 tablespoons vegetable oil





    Preheat the oven to 400 degrees F.


    Scrub the potatoes well and dry with paper towels. Poke several holes in them with a skewer to allow steam to escape. Place the potatoes on a small baking sheet and bake, uncovered, until tender, about 1 hour.





    Allow the potatoes to cool to room temperature. Refrigerate in a plastic bag with a resealable closure overnight.





    Peel the potatoes and cut into 1/3-inch dice. Melt the butter in a large skillet over medium heat and add the onion. Cook, stirring often, until softened, about 5 minutes. Season with salt and pepper. Use a slotted spoon to transfer the onion to a small bowl. Add the vegetable oil to the skillet and heat until almost smoking. Add the potatoes and leave to form a crisp crust. Do not disturb the potatoes until the crust is formed, about 5 minutes. Check to see if a crust has formed; if so, give a quick stir. If not, continue cooking for another 1 to 2 minutes, until the crust has formed. With a spatula, turn over large chunks of the crusted potatoes. Season with salt and pepper and continue cooking until golden brown. Stir in the onion, season again with salt and pepper, and stir until the hash is heated through, about 3 minutes.


    Serve hot.








    Oven Baked Dutch Apple Pancakes





    2 cans apple pie filling


    2 tablespoons butter


    1 teaspoon ground cinnamon


    3 eggs


    1/2 cup milk


    1/2 cup all-purpose flour


    1 tablespoon sour cream


    1 teaspoon lemon zest


    1/4 teaspoon salt


    Confectioners' sugar, for dusting





    Preheat oven to 350 degrees F.


    In a 10-inch cast iron skillet, warm the apple pie filling, butter, cinnamon. In a bowl, beat the eggs until frothy. Add the milk, flour, sour cream, lemon zest, and salt. Beat just until batter is smooth. Pour over the hot apple mixture in the skillet, and immediately put the pan in the oven. Bake for 20 to 25 minutes, or until the pancake is puffed up and golden brown. Using a small, fine sieve, lightly dust the top of the pancake with confectioners' sugar. Serve warm.
    Pineapple Upside Down French Toast





    1/2 stick unsalted butter


    1/2 cup firmly packed dark brown sugar


    15 oz. well-drained, canned crushed pineapple in juice, reserve 1/3 cup juice


    3 large eggs


    1 cup milk


    1/2 cup half %26amp; half


    1/4 teaspoon salt


    1/4 teaspoon cinnamon


    1/4 teaspoon vanilla extract


    8 1';-slices of challah bread





    Lightly grease a 13 x 9 x 2 baking dish.





    In a saucepan melt butter over moderate heat then stir in sugar until dissolved. Add pineapple, stirring well to incorporate. Spread pineapple mixture evenly in greased baking dish. Place bread slices over pineapple mixture, squeezing to fit in dish. In a bowl, whisk together eggs, milk, half and half, reserved pineapple juice, salt, cinnamon and vanilla extract: pour egg mixture evenly over bread. Cover with plastic wrap and refrigerate for several hours or overnight.





    Remove from refrigerator 陆 hour before baking. Preheat oven to 400 degrees F. Bake in middle of oven 20 to 25 minutes or until bread is golden.


    Serves 4.
    Cheese Blintzes with strawberries or strawberry jam. YUM.!! They are much like a crepe but only cooked on one side. Filled with a mixture of farmer's cheese and sugar, etc. Fold the blintz like a little burrito. Serve warm with the strawberries on top! Pretty healthy too........Okay, not really healthy as compared to a bowl of steel milled oatmeal but it's not really UNhealthy either. I bet you could get a simple recipe on allrecipes.com. ENJOY!!

    In a small bowl, beat the eggs until they loosen up. Add the half and half, and green onions. Mix well, highly season with salt and pepper and set aside.





    Butter a 12 by 10-inch baking pan. Line the pan with the bread, cutting and rearranging, if needed. Sprinkle the bread with the cooked sausage and cheese. Pour the egg mixture over the entire pan. Cover and refrigerate overnight.





    Preheat oven to 350 degrees. Cook covered for 25 to 30 minutes or until the egg mixture is set.
    This is YUMMY! And leftovers freeze quite well.





    Overnight Egg and Sausage Bake





    1 cup bisquick baking mix


    1 cup finely shredded cheddar cheese


    2 cups milk


    1 tsp ground mustard (dry)


    1/2 tsp dried oregano leaves


    6 eggs slightly beaten


    1 lb. cooked and drained sausage (I like Jimmy Dean or Bob Evans)





    Mix all ingredients in a large bowl. Cover and refrigerate overnight, at least 8 hours. Heat oven to 350. Grease 2 quart casserole. Pour egg mixture in and bake uncovered for about 1 hour or until knife inserted in center comes out clean.

    Have you tried soy yogurt? Whole Soy %26amp; Company makes a type that is completely dairy-free and is quite tasty. Sprinkle in some granola, and you've got a nice brekky. At my local Whole Foods, a carton of soy yogurt (one serving) is 99 cents; at an indy natural foods store, it's $1.19 a carton.





    You can also use soy milk, rice milk, almond milk, or oat milk in your cereal--try different brands to see what works for you. These days, soy milk is actually cheaper than cows' milk.

    i've been making these banana and oatmeal muffins which have no dairy. they're good hot, but if you don't have time in the AM, they can be made ahead of time and refrigerated:





    1 1/4 cups of whole oats


    1/2 tsp baking powder


    1/2 tsp cinnamon or pumpkin pie spice


    a pinch of salt





    2 mashed bananas


    1 tsp vanilla extract


    2 tbs oil (i use olive oil)





    mix the wet ingredients in one bowl, the dry in another and then mix together. it'll look a little loose and wet, but it's ok. put individual spoonfulls (about the size of a small muffin or cookie) on a cookie sheet and bake for about 20 minutes at 375.





    they're awesome hot, but cold works, too :) i eat mine in the AM with fresh fruit and a cup of tea.

    I know this sounds really strange but don't knock it until you try it. If you eat Fruity Pebbles or Trix you can use orange juice instead of milk... it's actually really really good. And your adding more fruit into a daily intake.Non-diary breakfast recipes please?
    Oatmeal is pretty good. It's quick to make (just buy quick cooking oats and only cook in water to avoid the dairy), but you can also dress it up with fruit (dried or fresh), nuts and honey. They also sell packages of instant oats.





    Edit: Yup, fruit juice is good with cereal (stuff that's more granola like, and less sugary), and some people swear by Soy Milk, but I hate that stuff.

    I get that too after eating dairy. Fresh fruit is good, but I know I hate fruit myself and would not eat it. If eggs don't bother you you could have eggs and bacon or sausage.

    A Texas Breakfast Casserole





    1 cup Crescent rolls


    1 lb Sausage, cooked and drained


    Fresh mushrooms, sliced


    3/4 lb Monterey jack cheese, grated


    6 x Eggs, beaten


    1 cup Cream of onion soup





    Method :


    Line a 13x9 inch Pyrex dish with rolls, sealing perforations. Cover with sausage, mushrooms and half the cheese. Mix eggs with soup and pour over casserole. Sprinkle remaining cheese on top. Chill overnight. Bake at 350 for 1 hour.


    Note: For variation, you can use cooked, crumbled bacon or bite-sized pieces of ham instead of sausage.

    dice up some apples (reall small) and mix with cinnamon and sugar. mix in with your favorite pancake batter and you have apple-cinnamon pancakes! Very yummy.

    I'm starting to get healthy and from the most part I can tell bad foods from good foods using my common sense but i was never a big breakfast eater. i just feel sick and tired in the morning and then later on in the day i get hungry and thats when i binge eat cause im starving from not eating anything.     i like to get a piece of toast and spread avocado on it, then scramble some egg and put it on top and then cheese maybe! lots of calories, and protein but i go to the gym in the AM and when i eat this i'm not hungry till way later, versus an hour later! good luck!
    Eat a couple of pieces of your favorite fruit. Nuts and seeds are also good too.





    Personally, I like to have a little bit of yogurt, granola, and fruit mixed together.

    Ingredients


    * 2 lbs frozen hash browns


    * 1/2 cup margarine, melted


    * 1 (10 1/4 ounce) can cream of chicken soup


    * 1 pint sour cream


    * 1/2 cup onion, peeled and chopped


    * 2 cups cheddar cheese, grated


    * 1 teaspoon salt


    * 1/4 teaspoon pepper





    Directions


    1. Preheat oven to 350F and spray an 11 x 14 baking dish with cooking spray.


    2 . Mix the above ingredients together, place in prepared pan and bake for 45 minutes or until brown on top.

    6 eggs


    1 medium onion, minced


    2 bell peppers, minced


    2 tomatoes, diced fine or 1 can diced tomatoes


    1 can mushroom pieces


    1/2 pound bacon diced and fried crisp


    1/2 pound ham, diced


    1 cup shredded sharp cheddar cheese





    cook and mince everything except the eggs.


    put eggs in bowl stir a little, add everything except the cheese. Pour into hot skillet with a little melted butter in it. Cook and stir til half done, sprinkle half the cheese in, continue cooking flipping the bits over, when nearly finished sprinkle remaining cheese on. Serve with hot buttered biscuits, orange juice, milk, and enjoy yourself very much.

    3 tablespoons butter


    1 small yellow onion, chopped


    4 cups frozen shredded hash browns


    1 pound bulk sausage, mild, hot or sage


    2 1/4 cups whole milk


    8 large eggs


    1 teaspoon salt


    1/4 teaspoon black pepper


    1/4 teaspoon freshly grated nutmeg


    2 tablespoons Dijon mustard


    8 cups cubed French or Italian bread, crusts removed


    2 cups (1/2 pound) grated Cheddar


    2 cups (1/2 pound) freshly grated Parmesan





    Preheat the oven to 350 degrees F.


    Spray a deep 13 by 9-inch casserole dish with vegetable oil cooking spray.





    Melt the butter in a large frying pan. Add the onion and saute over medium-low heat until soft, about 5 minutes. Add the hash browns and break apart. Saute until soft, about 5 minutes.





    In a second frying pan, saute the sausage, breaking apart large clumps. When the sausage is cooked through, remove it from pan.





    In a large mixing bowl, combine the milk, eggs, salt, pepper, nutmeg and mustard, briskly to blend.





    To assemble, spread the onions and hash browns evenly at the bottom of the greased dish. Place the bread cubes evenly on top of hash browns. With a slotted spoon distribute sausage as the third layer. Pour the milk and egg mixture over these layers. Add Parmesan as the next layer, while then adding the Cheddar.





    *Cook's Note: Save a few tablespoons of Cheddar for the last 10 minutes of baking, where you can add a fresh topping of melted Cheddar.





    Bake the casserole, uncovered for 45 to 50 minutes, until puffed and golden brown.
    Chewy Sticky Cinnamon Sticks


    Dough


    1 录 cups warm water


    1 Tbsp. instant yeast


    2 eggs


    戮 cup sugar


    陆 cup unsalted butter, softened


    1 tsp. vanilla extract


    1/3 cup nonfat dry milk


    1 tsp. salt


    录 tsp. cinnamon


    1 cup all-purpose flour


    2 to 3 cups bread flour





    Filling


    4 Tbsp. unsalted butter, softened


    1 cup sugar


    2 tsp. cinnamon


    2 cups raisins, plumped and patted dry


    1 egg white, beaten until foamy








    Dough


    Hand whisk the water and yeast together in the bowl of an electric mixer and let stand for 2 to 3 minutes for the yeast to dissolve. Whisk in the eggs, sugar, butter, vanilla, dry milk, salt, cinnamon, all purpose flour and 2 cups of the bread flour to make a thick dough. Knead the dough on a lightly floured surface for 8 to 10 minutes, gradually adding more bread flour as required to form a soft, elastic dough. Form the dough into a ball and place in a lightly greased bowl. Place the bowl inside of a large plastic bag, close the bag loosely and let the dough rise for about 45 minutes, or until almost doubled in size. Gently deflate the dough and let it rest for 10 minutes. Preheat the oven to 375. On a lightly floured surface, roll the dough out to a 20 by 10 inch rectangle. Spread the butter over the dough, then sprinkle it with the cinnamon, sugar, and raisins. Starting from a short side, roll up the dough into a log and flatten it gently. Cut into 12 equal slices and place them on 2 baking sheets stacked together with parchment paper on the top sheet. Brush with the egg white and then sprinkle them with sugar, then twist. Let rise for 15 minutes. Bake for 25 to 30 minutes.














    Cinnamon Apple Muffins


    1 1/2 cups all-purpose flour


    3/4 cup sugar


    1 1/2 teaspoons baking powder


    1 teaspoon ground cinnamon


    1/2 cup milk


    1/3 cup butter, melted


    1 egg, slightly beaten


    1 cup finely chopped apple





    Heat oven to 375掳F. Combine, flour, sugar, baking powder and cinnamon in medium bowl. Add all remaining ingredients. Stir just until flour is moistened.





    Spoon batter into greased 12-cup muffin pan. Bake for 18 to 23 minutes or until lightly browned. Let stand 5 minutes; remove from pan.














    Peach Muffins


    Ingredients:


    1/4 cup melted margarine


    3/4 cup sugar


    2 eggs


    1 cup milk


    1 tablespoon vanilla


    1 录 cup diced fresh or canned peaches in light syrup, drained


    2 1/4 cups flour


    1 T baking powder


    1/2 tsp. baking soda

    Directions:


    Preheat oven to 375 degrees F. Thoroughly mix the margarine, sugar, eggs, milk and vanilla. Add the dry ingredients to the egg mixture alternately with the peaches. Thoroughly mix batter until all ingredients are fully incorporated. Grease 10-12 regular size muffin pan sections. Fill each muffin section 3/4 full with the batter.


    Stir all of the topping ingredients together and then sprinkle evenly on the muffins.


    Bake 25-35 minutes until firm to touch or until an inserted toothpick comes out clean. Add 1 extra egg when doubling or add 2 extra eggs when tripling this recipe.
    Well, I like to make some pancakes while also cooking some sausage and eggs. I chop the sausage into pieces and throw it in the mix with the egg. When the egg is finished, it's an omeltte, I throw it in the pancake, wrap the pancake up and use some syrup to seal the sides up and then I stick a toothpick in the center (this way the pancake-egg wrap stays closed and my kids can eat it off of the toothpick). They seem to really enjoy that.





    I also like to cook Italian Sausage with chopped onion %26amp; green pepper. I serve it with toast %26amp; butter, sometimes putting it on the toast.. it's so good. Italian sausage has a different flavor than other sausage... the flavor goes perfect with the sweet green pepper and onion.

    DIRECTIONS


    Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.


    In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.


    In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.


    Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

    2 eggs,beaten


    1 ts cinnamon


    1 TB water


    1 packet splenda (or 2 ts sugar)





    Put your saucepan on the stove. Heat up. Spray with cooking spray. Heat until a drop of water sizzles. Mix all ingredients together.





    Place in pan. Put cover on pan %26amp; cook about 5 minutes until cooked through.
    Here is a simple one. Butter bread on both sides and cut a hole in the center using a biscuit cutter. Put the bread in the pan and break an egg in the hole. Fry them on both sides, as well as the hole you cut out. Serve with your favorite breakfast meat.
    If you like bananas, there is a great banana muffin recipe on the allrecipes.com website. The muffins have a crumbly brown sugar topping and are very moist! It is one of there top 10 recipes on the site.
    some eggs with choriso (mexican sausage) fry your choriso and add eggs cook until done. MMMM. Fried potatoes with peppers and onions and eggs. Breakfast smoothies with fresh fruit and yogurt.
    I just thought of something for someone else and came up with fried potatoes and eggs, a favourite of mine.


    It is easier to use left over boiled potatoes the next day.
