Light Christmas Breakfast Recipes/Ideas?

Does anyone have some breakfast or brunch recipes they'd like to share that they have every Christmas? I'm looking for something that isn't too heavy, but still delicious!Light Christmas Breakfast Recipes/Ideas?
Broccoli Quiche


8 oz frozen chopped broccoli (thawed)


1/4 cup chopped onion


1 cup shredded cheddar cheese


2 eggs


3/4 cup bisquick baking mix


1/2 cup milk


dash of pepper


--Cover the bottom of a 9 inch pie plate and top with the chopped onion and then the cheddar cheese. In a bowl, combine the eggs, baking mix, milk, and pepper. Pour in a spiral motion over the cheese starting from the outside going in (this allows the pie to bake evenly). Bake from 25 to 35 minutes at 400 degrees. *Other additions are mushrooms, bacon, sausage, etc.*

I was going to suggest also a quiche. But, make your own pie crust, brush it with egg white, pierce it, then put in your meat (ham, sausage, whatever you want to use), chives, shredded swiss cheese, and then put in your milk and egg mixture. Serve that with a bowl of mixed fruit. Not too heavy and not too much food. You can add any veggie to it you would like or even make it pure veggies - spinach is always good in a quiche.
Cinnamon French Toast!


Use the refrigerated cinnamon rolls. Easy


Melt half a stick of butter in a glass baking dish. Cut the cinnamon rolls into eight pieces and line the buttered pan. Mix 6 eggs, 1/2 C of cream, cinnamon, and maple syrup, chopped pecans and pour over the rolls. Bake at 375, for about 40 minutes. Check on it, edges will turn brown fast. Cut and serve with bacon, the packaged frosting, and a little more syrup.
Might be a little late for shopping but we are having taco boats, with sausage instead of hamburger. But if you have hamburger use it.





Wonton wraps baked in a muffin tin to form a bowl. I pre-bake about 24 to a pound of sausage or meat. Brown one pound of sausage or hamburger meat with one chopped sweet onion. Drain. Add 1 packet for each pound of meat Ranch Dressing Mix (dry packet). Mix well and spoon in cups that you placed on a cookie sheet and top with grated cheese.





If you use sausage you can add scrambled eggs, green peppers to make it a complete meal.





They are great and will go fast!

I thought this recipe looked good, and you can add different vegetables (mushrooms, red or green pepper, spinach, etc), lean ham, or a little big of turkey bacon, and some low fat cheddar cheese. Also, I would take the dill out of the recipe because some people don't like dill and it's better not to take the risk. Serve with some whole wheat bread that has some avocado slices on it for creaminess rather than butter, or some low fat cream cheese. Also add some fresh fruit on the side.
Our family tradition is to make sausage cheese balls and sausage pinwheels. These are bite-size and very good.





Sausage cheese balls:


1 pound sausage (I use Jimmy Dean medium to spicy sausage)


2 cups of cheddar cheese


2 cups of Bisquick


Seasonings: garlic, salt, pepper, and any other you choose





Combine all ingredients in a medium bowl, then take spoonfuls and roll into balls. Place on a baking sheet and bake until brown and bubbly.





Sausage Pinwheels:


1 pound sausage


1 can of biscuits





On a floured surface roll out biscuits into one large piece. Spread sausage over the top. Roll it up like a jelly roll. Bake in oven until brown.
We like to do fruit smoothies- take vanilla yogurt, milk, and frozen or fresh fruit, toss it all into a blender and presto! It's very yummy, has tons of calcium, vitamins and minerals, and quiets your sweet tooth all at the same time.
